How to Make Gingerbread Cookies

Mix the Dough
Mix flour, cinnamon, ginger, and baking soda well together.
Beat 85g of unsalted butter with 50g of brown sugar until well combined. Then add in 50g of honey and mix well.
Add 1 egg into the mixture and mix well.

Roll the Dough and Bake the Cookies
Add a little dry flour into the butter and egg mixture, mix well, then knead into a smooth dough. After that, wrap it tightly and refrigerate for at least 2 hours.
Roll the dough to a thickness of about 0.5cm and use cookie cutters to shape as desired. Bake the cookies at a temperature of 165 degrees Celsius for 12 – 15 minutes.

Beat 150g of powdered sugar with 1 egg white until smooth.
Divide the mixture into 3 equal parts and then color with food coloring as desired.
Put into a piping bag and decorate the cookies as desired.

How to make Eggless Gingerbread Cookies

Mix the butter and sugar mixture (butter, sugar, orange zest)
First, you put 115g of softened butter into a bowl and use a flat whisk to mix it well. Then, add 100g of brown sugar and 50g of palm sugar into the bowl. If you don’t have brown sugar and palm sugar, you can substitute with 150g of granulated sugar instead!
Continue to mix well until the ingredients and spices are blended together. Next, add 1 teaspoon of vanilla extract and 1 teaspoon of grated orange zest into the bowl and mix well.

Mixing the Dough
You add 140g of all-purpose flour, 140g of whole wheat flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/4 teaspoon of ginger powder, 1/4 teaspoon of cinnamon, and 1/8 teaspoon of cloves into a bowl and mix well.
Then, you pour 3.5 tablespoons of warm milk into the bowl and continue to mix thoroughly. To make the dough smoother, you can knead it directly with your hands.
After kneading the dough, you place the bowl in the refrigerator to chill the dough for 10 – 15 minutes.

Shaping and Baking the Cookies
You take the dough out of the refrigerator, placing the dough in between 2 sheets of baking paper to prevent it from sticking to the rolling pin.
You roll the dough until it reaches a thickness of about 1/2 inch, then stop and remove the top layer of baking paper.
Next, you press cookie cutters with your favorite shapes into the dough to create shapes.
You place a layer of baking paper on the baking tray and then place the shaped cookies on top.
After that, you place the cookies in the oven and bake for 10 minutes at a temperature of 170 degrees Celsius.

Take the cookies out of the oven and wait for them to cool down.
Mix 1 egg white and 240g of powdered sugar together to make the icing, then transfer it to a piping bag and start decorating the cookies to finish.
