How to make Santa Claus cupcake

Sift the flour mixture
Sift 180gr of all-purpose flour, 266gr of powdered sugar, 3gr of baking powder, 9gr of baking soda, 2.8gr of salt, and 33gr of cocoa powder into a mixing bowl. Then use a whisk to mix evenly.
Tip: You can sift the mixture about 2 – 3 times for a smooth flour mixture, without lumps.

Mix the egg mixture
Add 79ml of vegetable oil, 118ml of sweetened fresh milk, 2 eggs, 2ml of vanilla extract, 59ml of sour cream, and squeeze in the juice of 1/2 lemon into a bowl. Use a whisk to beat the eggs until the mixture is smooth.
Next, gradually pour in 60ml of hot coffee into the egg mixture. Pour the coffee while stirring the mixture evenly.

Mixing the cake batter
Pour the egg mixture into the bowl of flour from earlier. Use a mixer or whisk to mix thoroughly, creating a uniform mixture.

Pouring into molds and baking
Preheat the oven to 170 degrees Celsius for 15 minutes to stabilize the oven temperature.
Line the cupcake molds with paper and fill them with the batter up to 1/2 full. Then, place the cakes in the oven and bake for 30 minutes at 177 degrees Celsius.

Whipping buttercream
Add 0.45kg of room temperature peanut butter into a mixing bowl. Turn on the mixer at medium speed until the butter is soft and smooth.
Next, sift about 0.75kg of powdered sugar into the mixing bowl. Continue to mix and add 2ml of vanilla extract, mixing until the mixture is fluffy and smooth.
Finally, divide the mixture into 3 portions. In one portion, add a little red food coloring to the cream and mix well. In the second portion, use a toothpick to add a little pink coloring and mix until the cream is evenly colored. The remaining portion should be placed in a piping bag.
Tip: You can divide the sugar into 3 parts and sift each part in, mixing well for a smoother mixture.

Decorating the Santa Claus figure
Spread light pink cream in the center of the cake. Next, spread red cream on top to create a hat shape. Add chocolate candies to create eyes and a nose.
Then, spray a little whipped cream on the empty part of the cake to create a beard for Santa Claus and add a bit to the hat as shown below.

Some tips for successfully making cake:

- The baking temperature and time must be monitored correctly to achieve the best results.
- Baking soda is used to create the fluffiness of the cake. However, you can skip it if you can’t find it.
- If you want to decorate the cake, you should use light creams such as: fresh cream, whipping cream, topping cream, or buttercream. Avoid putting too many things on the cake, as it will make the cake heavy and cause it to collapse.
- Wrap the cake tightly and store it in the refrigerator. When using, spray a little water on the cake and bake at 150 degrees for 5 – 7 minutes to make the cake softer and moister.
