How to Choose Fresh Pork
- First, you should choose pork pieces that have a bright pink or light red color. When you cut into it, the meat should have a pinkish-white color, a slight shine, and the fat should be bright white and firm.
- To select a good piece of meat that is not too greasy or too dry, you should choose a piece that has a balanced ratio of fat and lean meat.
- Good, clean meat, not raised with lean substances, usually has a firm texture, with the meat and fat tightly adhered to each other, and when held, it does not feel too loose.
- You should not choose pork pieces that have a foul smell or lack elasticity when pressed, as this indicates old meat that is no longer fresh.
How to Choose Fresh Eggs
- Good eggs usually have a rosy appearance, with a layer of white powdery substance around them, and feel firm to the touch. You should not choose duck eggs that are dull in color or have a faint foul smell.
- When you hold an egg up to the light, if it has a clear pink color with a pink dot in the center, and an air cell with a diameter of no more than 1 cm, it is a fresh egg. Conversely, old eggs often show red spots with many veins, and the air cell is wider than 1.5 cm. Spoiled eggs also show uneven colors and a grayish hue.
- Dropping duck eggs into a 10% saltwater solution is also a good way to check the freshness of the eggs. If the eggs have been stored for 3 – 5 days, they will sink to the bottom when placed in the solution. If the eggs float to the surface, they are older than 5 days and you should not use them.
- You should not choose eggs that make a sloshing sound when gently shaken, as this indicates they have been stored for a long time and are no longer fresh.
How to Make Braised Pork

Marinate the Meat
Pork belly or hock should be washed with salt water after purchase, drained, then cut into bite-sized pieces and placed in a bowl. Choose meat with thin skin for better braising, quicker tenderness, and less greasiness.
Sequentially season into the bowl 1 tablespoon of minced onion, 1 tablespoon of minced garlic, 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1/3 tablespoon of seasoning powder, and 1 teaspoon of pepper, mix well.
Use plastic wrap to cover the bowl of meat, marinate for at least 1 hour for the meat to absorb the spices.

Caramelizing Sugar
Put a pot on the stove, add 1 teaspoon of sugar into the pot and heat it over medium heat, at the same time use chopsticks to stir until the sugar water turns a brown color, then turn off the stove.
Wait for the sugar to cool, then the color will darken, pour in an additional 1/2 cup (rice bowl) of filtered water to dilute it a bit.

Braised Pork
You place the marinated pork into the pot with the caramelized sugar, stir over high heat until the pork is seared, then pour in 400ml of coconut water.
Cover the pot and braise the pork over low heat for 30 minutes. After 30 minutes, if the water is too low, add more water, add 5 boiled duck eggs that have been peeled into the pot, cover it and continue cooking for another 30 minutes until the pork is tender, then turn off the stove.
