- For tangerines, good tangerines will have firm, naturally shiny yellow skin, soft to the touch, and elastic. The stem should not be detached or wilted, the fruit should be fresh and not bruised or have any blemishes. Some tangerines may have beautiful, firm skin but lack elasticity and feel hard when held; those are immature fruits that will not taste good when made into jam.
- However, you should also avoid choosing tangerines that are too large or overly plump, as they are often fertilized with too much nitrogen, making them less fragrant and less sweet.

You should choose young ginger, medium-sized roots, with shiny and firm skin, avoiding old ginger as it is usually fibrous, very spicy, and does not taste good.
How to make candied tangerine peel and ginger

Prepare the ingredients
After buying tangerines, peel them and cut the peel into strips. Peel the ginger and cut it into strips.
Next, soak the tangerine peel and the cut ginger strips in warm water mixed with 1 tablespoon of salt for about 1 hour, then rinse with cold water about 4 – 5 times and let drain.

- You should soak and rinse the tangerine peel and ginger multiple times to reduce the bitterness and spiciness.
- The tangerine flesh (segments) can be stored in the refrigerator for later use, blended into smoothies, or used to prepare many delicious dishes like cakes, salads, etc.

Soak the mixture
Put tangerine peel, ginger, and sugar in a bowl in a 1:1 ratio (for every 200g of ginger and tangerine peel, add 200g of sugar accordingly).
Mix the ingredients well and place them in the refrigerator to soak overnight or for 8 hours for the tangerine peel and ginger to absorb the sugar evenly.
After about 8 hours, take the mixture of candied fruit and ginger out, and add more water until it covers the mixture.
