How to Choose Beef for Making Dried Beef
- Good beef should have a bright red color, fat that is bright yellow, and tendons that are white.
- Choose small, tender cuts of meat, not too fine.
- When pressing the meat with your hand, if it has good elasticity, does not stick to your hand, and has no foul smell, it’s good meat.
- Avoid buying meat that appears pale or greenish, with round white spots between the muscle fibers.
- Additionally, if the meat is dark red, with deep yellow fat, yellow bones, mushy texture, and feels sticky to the touch, do not buy it.
How to make dried beef pieces using an air fryer

Prepare the meat marinating ingredients
Wash the beef with water and let it drain.
Then, slice the meat thinly along the grain.
Thinly slice lemongrass, ginger, and bird’s eye chili, then blend them with garlic in a blender.
Note: Only blend the dry ingredients, do not add water. -
Marinate the beef
In a bowl with the beef: 10g five-spice powder, 2 tablespoons of turmeric powder, 3 teaspoons of sugar, 1 tablespoon of chili powder, 4 teaspoons of oyster sauce.
Mix well until the beef is evenly coated with the spices, then wrap tightly and refrigerate for 1 hour.

Dry the beef using an air fryer
Place the meat in the air fryer, drying it at a temperature of 140 – 160 degrees Celsius for 40 – 45 minutes.
Note:
- Do not stack the beef on top of each other.
- After 10 minutes, you can turn the meat over for even cooking.
