Ingredients for making Chewy Jelly Candy using an air fryer Serves 4

How to choose fresh and delicious passion fruit
- Select passion fruits with a dark purple skin that is slightly wrinkled, large in size, and has a dry stem.
- Choose passion fruits that are dense. You can check the density by holding the fruit and shaking it lightly. A juicy passion fruit will feel a bit heavy when shaken, appearing dense inside.
- Additionally, choose passion fruits that have a light, distinctive fragrance; the stronger the aroma, the better the fruit.
- Avoid fruits that have a foul or sour smell.
- Do not choose fruits with smooth skin and still green, as this indicates that they are immature, with thick skin and less pulp.

How to Make Jelly Fruit Jam with an Air Fryer

Coloring the Jam
Cut the passion fruit in half and filter out the juice to create a yellow color.
To create a green color, wash the pandan leaves, chop them finely and blend with 50ml of water. After blending, filter the mixture through a sieve to obtain the juice.
Boil 100ml of water, then add 50gr of butterfly pea flowers and stir until the flowers release their color, to create a blue color.

Cook the jelly
Add 1.5 liters of water to a pot and bring it to a gentle boil, then add 25 grams of jelly powder, stir the mixture well, and let it soak for 30 minutes for the jelly powder to expand.
After 30 minutes, place the pot on the stove, add 300 grams of sugar, and stir the mixture over medium heat until it gently boils, then turn off the heat.

Mix colors and pour into molds
Prepare 5 molds, then pour 300ml of jelly liquid into each mold.
Next, pour the following colored mixtures into each mold to color the jelly: 30ml of butterfly pea water, 30ml of coconut milk, 30ml of pandan leaf extract, 30ml of passion fruit juice, 30ml of coffee water.
Stir well to blend the colors and wait for 2 – 3 hours for the jelly to fully set.

Shaping and Drying
Take each piece of jelly out of the mold, then use a knife to cut into strands about 1/2 finger thick and about 1 finger long.
Arrange the jelly pieces in the air fryer and dry at a temperature of 60 – 80 degrees Celsius for 20 – 30 minutes.
After 30 minutes, let the jelly cool completely and then continue drying for another 30 minutes. Repeat the process until the jelly is completely dry, with an estimated time of about 6 – 8 hours.
Tip: If you don’t have an air fryer, you can sun-dry the jelly for 3 – 4 days until it dries out! -
Final Product
The completed jelly candy is colorful, made from natural ingredients, safe, with a chewy texture and a variety of flavors ranging from sweet and rich, sour to slightly bitter, incredibly delicious. It will surely make your Tet candy tray more appealing!
How to preserve delicious fresh jelly jam
- For homemade items without preservatives, you should store them in a tightly sealed bag or container, and use them within 2 – 3 days if kept at room temperature, in a cool and dry place.
- Alternatively, you can keep the jam in the refrigerator refrigerator for 5 – 7 days.
