Activate the yeast
To activate the yeast, put 60ml of water, 60ml of fresh milk, 5gr of yeast, and 50gr of sugar into a large bowl and mix well. Then leave it as is and wait for 10 minutes for the yeast to activate.

Mix and proof the dough
Next, use a sieve to sift 300gr of whole wheat flour and 50gr of all-purpose flour into the activated yeast mixture. Then use a whisk to mix them until they form a cohesive mass.
After that, place the dough on a clean surface, add 40gr of butter, and knead the dough by pushing it away and pulling it back until the dough is smooth.
To check if the dough has been kneaded well, take a small piece of dough and stretch it with both hands; if the dough can stretch without tearing, it is good.
When the dough is smooth, place it in a clean bowl, cover it with plastic wrap, and let it proof for 1 hour. Then take the dough out and gently knead it to remove all the air bubbles.

Shaping the bread
After the dough has risen well and the air bubbles have been pressed out, divide the dough into equal small portions.
Next, flatten the dough, spread it evenly, and place cheese in the center. Then, use your hands to both press the edges of the dough together and roll it into a ball. Repeat this process with the remaining dough portions.
Next, continue to cover the dough with plastic wrap and let it proof for about 45 minutes to allow the dough to double in size. This will make the bread fluffy and softer when baked.

Brewing coffee for the cake
While waiting for the dough to rise, we will brew coffee to use for the cake. You add the remaining 40g of butter, 30g of powdered sugar, and half an egg into a bowl, then add brewed coffee made from 5g of coffee and 15ml of hot water.
Next, use a whisk to mix the above mixture well. Then, add 50g of flour and continue to mix thoroughly.
Finally, put the mixture into a piping bag. Thus, you have completed the coffee cream to cover the cake.

Baking the cake
You cut a small hole in the piping bag and spray a layer of coffee in a spiral pattern on the surface of the dough that has risen for 45 minutes.
Next, place the cake in an air fryer or oven and set the temperature to 170° and bake for 15 minutes until the cake has a brown and crispy crust.
