All-purpose flour 35 gr Cornstarch 25 gr Fresh milk 120 ml Eggs 3 pieces Whipping cream 100 ml Sugar 65 gr Lemon juice 1/2 teaspoon Cooking oil 15 ml

How to make Egg Cream Sponge Cake using an Air Fryer

  • Make the egg cream

    Use a whisk to beat 1 egg yolk with 10g of sugar until the yolk is fluffy and light yellow.

    Then, add cornstarch along with warm fresh milk and mix the mixture well to combine. Pour the mixture into a pan on the stove, cooking until the mixture thickens.

    Next, use a mixer to whip the cream until stiff peaks form, then mix it evenly with the mixture cooked on the stove. Finally, you will have a beautiful egg cream.

  • Mix the cake ingredients

    Beat the remaining 2 egg yolks with 20g of sugar until the sugar is completely dissolved. Then, add fresh milk, cooking oil, flour, and cornstarch to the above mixture and use a whisk to mix well, resulting in an egg yolk mixture.

  • Mix the flour mixture with the egg whites

    You use an electric mixer to beat the egg whites with a few drops of lemon juice until frothy.

    When the egg whites are fluffy, add 35g of sugar and continue to beat until the sugar dissolves and the mixture is evenly frothy and smooth.

    Next, add 1/3 of the egg white mixture to the bowl of egg yolk mixture made in step 2 and use a spoon to mix the mixture together. Once well combined, continue to add another 1/3 of the egg white mixture.

    Continue this process until all the egg white mixture is added to the bowl of egg yolk mixture, mixing well, and you will achieve a smooth frothy mixture.

  • Bake the cake

    You preheat the air fryer for 2 minutes at 160 degrees Celsius. Next, prepare 4 small cake molds lined with parchment paper and pour the mixture you just mixed in step 3 into the molds.

    Then, place the cake molds in the fryer and bake at 160 degrees Celsius for 30 minutes.
