How to choose fresh squid
- To select fresh squid, you should choose squid that has bright colors, with a brown outer skin and a body that is opaque white like milk.
- When you press your hand against the body of the squid, it should quickly return to its original state without any dents. This indicates that the squid’s flesh is firm, chewy, and thick.
- In particular, if you observe that the squid’s eyes are clear, not bulging, and there is no yellowish liquid leaking out, then it is fresh squid.
- Additionally, you should choose squid with the head still tightly attached to the body, the ink sac not ruptured, and see that the flesh is slightly pinkish.
- Avoid purchasing if the squid appears soft and mushy, pale white, cloudy eyes, or even has a foul smell.

How to make Bánh xèo using a non-stick pan

Mixing the batter
First, add 100gr of Bánh xèo flour into a quánh, then add 50gr of crispy frying flour, 1/2 teaspoon of turmeric powder along with 1 teaspoon of salt, and mix well.
Next, pour in 200ml of water and stir to dissolve the flour so that it doesn’t clump. Let the batter rest for 30 minutes, then add 2 tablespoons of cooking oil and mix well.
Finally, add 1 chicken egg, finely chopped scallions, and 1/2 can of beer that you prepared earlier, then beat until combined. Continue stirring the batter until it becomes thick.
Note:- Depending on the brand of flour, adjust the amount of water accordingly!
- Do not make the batter too thick as it will result in a thick, non-crispy shell that takes longer to cook.

Prepare other ingredients
300g of fresh squid after purchasing, you need to wash it clean, rub it with salt to reduce the fishy smell, and then slice it thin.
Next, peel the onion, wash it clean, cut it into wedges, then soak it in ice water to make it crispy and reduce the pungency, and then slice it thin.
For 100g of bean sprouts, you need to remove any remaining skins, wash them clean, and let them drain.
