Ingredients for Chicken Adobo For 4 people
Chicken thighs 2 kg Bay leaves 4 gr (4 leaves) Green onions 2 stalks Cilantro 2 stalks Lemon 1 fruit Garlic 1 bulb Soy sauce 175 ml Fish sauce 1 tablespoon Sake 120 ml Vinegar 120 ml Cooking oil 3 tablespoons Common spices a little (Salt/ sugar/ ground pepper)
How to choose fresh and good chicken
- Fresh and good chicken usually has a shiny yellow skin and does not show any unusual tiny spots on the surface.
- The meat should be pink, not too dark, when pressed lightly with your hand, you can feel that the chicken is firm and has good elasticity.
- You should avoid buying chicken that is too soft and mushy, or even slimy, and has a strange fishy smell, as that indicates the chicken is spoiled.
How to Prepare Adobo Chicken

Prepare Ingredients
First, with 2kg of chicken thighs you bought, take a little salt and rub it over the entire surface of the meat, then rinse it several times with clean water, drain, and cut into bite-sized pieces.
Green onions and cilantro should have their roots removed, washed directly under running water until clean, drained, and chopped finely with a knife.
Finally, for the garlic, just peel it and chop it finely.

Make the Sauce
Take a bowl and add 175ml soy sauce, 120ml vinegar, 120ml sake, 1 tablespoon fish sauce, 3 tablespoons sugar, the minced garlic, 4 bay leaves, the zest of 1 lemon, and 1/2 teaspoon ground pepper.
Next, use a spoon to mix well so the ingredients are combined.
Tip: If you don’t have sake, you can substitute it with water! -
Fry the Chicken
Once the ingredients are ready, place a pot on the stove with 3 tablespoons of cooking oil over medium heat. When the oil is gently sizzling, add the drained chicken thighs and fry for about 3 minutes.
Next, turn to the other side and continue frying for another 3 – 5 minutes until done.

Make adobo chicken
When you see the chicken thighs have tightened up and the meat has slightly turned yellow, add the bowl of prepared sauce, cover it, and cook on low heat for about 20 – 25 minutes.
Once the sauce has thickened and the chicken thighs are cooked, season to taste, add the remaining green onions and cilantro, then turn off the heat and serve on a plate to enjoy!
