Ingredients for Korean Chili Powder For 100gr of chili powder

Fresh ripe chili 200 gr Garlic 5 cloves Pepper 2 teaspoons

How to prepare Korean Chili Powder

  • Prepare and dry the chili

    Prepare the chili: Take 200g of fresh chili, cut off the stems, remove the seeds, and wash thoroughly.

    Dry the chili:

    Method 1: Place the chili in a basket and expose it to sunlight at around 29 degrees Celsius for 2 days, for 6 – 7 hours each day.

    Method 2: Dry it using an oven at 65 – 75 degrees Celsius. If using an oven to dry, in the first hour, gradually lower the temperature over time, then observe until the chili is completely dry; if it crumbles easily when squeezed by hand, it is done.

    Tip:

    • To dry the chili faster, you can use a knife to make lengthwise cuts on the chili!
    • To maintain the red color of the chili powder, briefly blanch it in hot water (80 – 90 degrees Celsius) for 3 – 5 minutes, then remove and clean it before placing it in the dryer.
    • You should wear plastic gloves to avoid direct contact with the chili, which can cause burns, and to prevent touching your eyes, nose, etc.

  • Prepare the garlic

    Prepare the garlic: Peel 5 cloves of garlic, wash them, let them dry, and slice them thinly.

    Dry the garlic:

    Method 1: Sun-dry the garlic just like the chili.

    Method 2: Alternatively, you can wrap the garlic in aluminum foil and roast it in the oven at about 80 degrees for 1 hour; during the drying process, turn the garlic 5 – 6 times to prevent burning. Finally, the garlic will be cooked, dry, and fragrant.

  • Grinding Chili Powder

    After the chili and garlic have dried, put them into a blender and grind them finely.

    If you want to use fine chili powder, grind it until it meets your requirement; for coarse chili powder, you can grind the chili and garlic evenly until the powder is just small enough.

    Finally, add 2 teaspoons of pepper and grind again. Now you have completed the Korean chili powder seasoning!

    Note: When grinding chili, remember to close the lid of the blender tightly, and only open the lid after the blender has completely stopped!

    Korean chili powder has a moderate spiciness with a fragrant taste of garlic and pepper. This will be a “valuable” seasoning to make your family dishes even more appealing!

Differences between Korean chili powder and Vietnamese chili powder

Korean chili powder has a moderate spiciness, slightly sweet, unlike the intense heat of Vietnamese chili powder. Additionally, Korean chili powder includes garlic and pepper, giving it a distinctive aroma from these two ingredients. When used in dishes like kim chi, tokbokki… it will create an authentic Korean flavor!

Main uses of Korean chili powder

Almost every Korean dish uses chili powder as a primary seasoning. Moreover, chili powder helps stimulate the taste buds, enhances the enjoyment of food, and adds color to the dishes.

How to store chili powder

You should place chili powder in a food storage jar or a tightly sealed plastic bag, keeping it in a cool place away from direct sunlight. If stored properly, chili powder can be used for up to 1 year!
