Prepare the ingredients

When the sauce has changed color, add the chopped shallots, garlic, and chili, stir well until fragrant, then add the fish, gently flip to coat the fish evenly.
Next, season the pot with: 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1.5 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of pepper, 1 tablespoon of seasoning powder, then gently flip the fish again to let it absorb the seasoning and simmer on low heat for about 5 minutes.
When the fish is just firming up, add 1/2 cup of water (rice bowl size) and continue cooking on medium heat for about 20 minutes until the seasoning has dissolved and absorbed into the fish, then taste and adjust according to your family’s preference, and then turn off the heat.
