Mix the cake batter
Sift 70gr almond flour, 70gr powdered sugar into a bowl, then mix well for the mixture to combine.

Whip the egg whites

Divide 230g of powdered sugar into 3 portions, gradually add each portion one at a time and beat until dissolved. Beat each portion of sugar for about 30 seconds on low speed before adding the next portion.

Note:
- Divide the sugar into 2 or 3 portions and add it slowly a little at a time. Avoid adding all at once.
- The egg whites should be at room temperature before whipping.

Mix the flour with the egg whites
Add the dry flour mixture to the egg whites in the bowl and mix well.

Shape the cake
