How to choose fresh and delicious beef tail
- Choose beef tails with bright red meat, bright yellow fat, and white tendons.
- Avoid choosing beef tails with dark red meat and unpleasant odors.
- Do not buy beef tails that feel soft when pressed, indicating the meat is mushy. A good beef tail will feel firm, have good elasticity, and no unpleasant smell when pressed.
How to prepare Beef Tail Stewed with Traditional Medicine

Prepare the ingredients
Clean the beef tail, briefly blanch it, and cut it into bite-sized pieces.
Soak the dried lotus seeds in water for about 15 minutes until soft.
Remove the hard ends of the lotus root and peel off the thin outer layer. Then, soak the lotus root in cold water and rinse it several times with cold water to remove any mud. Cut the lotus root into slices about 1 cm thick.
Note: Soak the sliced lotus root in water mixed with a little lemon juice or vinegar to prevent the lotus root from turning dark.
How to clean beef tail without a foul smell
- Soak the beef tail in water for about 10 – 15 minutes.
- Wash the beef tail, scrape off any remaining hair, then rub salt onto the beef tail. Continue by rubbing ginger onto the beef tail to reduce the smell, and rinse it 2 – 3 times with clean water.
- Place the beef tail in a pot of boiling water with a little salt, cut the beef tail into small pieces, blanch for about 5 – 7 minutes, then remove and let it drain.
- Remove the fatty parts at the base of the beef tail.

Stew the beef tail
Place the prepared beef tail into a stewing pot, add the lotus root, and add the lotus seeds and the traditional medicine spice packet.
Add about 1 liter of coconut water to the pot. Turn on the stove and simmer over medium heat until the coconut water boils, then add water until the stew covers the beef tail and lotus root.
Add 2 teaspoons of sugar, 1 teaspoon of seasoning powder, and adjust the seasoning to your family’s taste.
Wait until the pot comes to a boil again, then reduce the heat and simmer gently for about 1.5 hours until the beef is tender, depending on the size of the beef tail, as beef tails tend to be quite tough.
