How to choose fresh and delicious snakehead fish
- To buy fresh snakehead fish meat, choose fish with clear eyes, silvery-white body, and thick flesh for easy scraping of the meat.
- Fresh and delicious snakehead fish has a natural smell of river water, the flesh is clear, white interspersed with light pink, with red veins, and when scraped, the flesh has a natural gloss.
- Good fish meat often has elasticity; when lifted, it feels firm and does not fall apart.
- Avoid buying fish with a fishy, foul smell, strange odors, or fish meat that is dull in color or pale green.
- You should buy whole fish and ask the seller to scrape the meat and bring it home to grind for making fish cake, avoiding the situation of buying low-quality fish cake.

How to make Thac Lac fish cakes

Prepare the ingredients
Wash the Thac Lac fish thoroughly with water, then use a paper towel to pat it dry.
Next, add 1/2 teaspoon of pepper, 1 teaspoon of seasoning powder, and then use a spoon to mix well to make the fish cake smooth, until the fish is finely minced and sticks together into a mass.

Fry the fish cakes
Put 4 tablespoons of cooking oil into a pan, heat the oil until it boils, then reduce to low heat and scoop each tablespoon of Thac Lac fish cake into the pan to fry.
Fry for about 10 – 15 minutes until the fish cake balls puff up and are slightly golden, then turn off the heat and remove them to a plate to drain the oil.

Braised Fish Cake
Prepare a clay pot to braise the fish, add the oil used to fry the fish earlier, and heat it again over medium heat. Then add 2 tablespoons of sugar to caramelize, and at this point, reduce the heat to low and stir continuously for the sugar to dissolve.
When the sugar has dissolved, is bubbling with tiny bubbles, and has turned a light brown color, turn off the heat and continue stirring until the caramel sauce thickens.
Tip: To save time, you can either make your own caramel sauce or buy pre-made caramel sauce available at stores TasteVN.Next, add 1 tablespoon of minced garlic, turn on the heat to sauté until fragrant and golden, then add 2 tablespoons of fish sauce, and 1/2 teaspoon of chili powder, stirring well. After that, add the fried fish cake into the pot, simmer over low heat.
Then season with sugar and fish sauce to suit your family’s taste and stir well for the fish cake to absorb the seasoning.
Finally, sprinkle a little pepper, chopped green onions, and 4 red chili peppers on top of the braised fish cake and simmer for another 5 minutes to finish.
