Ingredients for Coconut Ice Cream using a blender Serves 6

Egg yolks 3 pieces Sugar 50 g Coconut milk 250 ml Tapioca flour 1 tablespoon Coconut meat 20 g Whipping cream 250 ml Vanilla 1 teaspoon (liquid vanilla – can be replaced with 1 stick of vanilla powder)

Blender (choose a high-power blender, from 300 W, with a capacity of about 1 liter or more to blend all ingredients at once and avoid splattering), egg beater, pot, pan, sieve.

How to make Coconut Ice Cream with a Blender

  • Beat the egg yolks and coconut milk

    Add sugar and the bowl of egg yolks, beat the mixture with a whisk until the mixture turns light yellow, then stop.

    Next, place the pot of coconut milk on the stove to heat, and after the coconut milk boils, turn off the heat, pour the coconut milk into the bowl of eggs and beat the mixture until fully combined.

  • Mix the tapioca starch and roast the coconut meat

    Sift the tapioca starch into the mixture bowl, beat it well again, and then pour it into a boiling pot. After seeing the mixture boil, turn off the heat and let it cool.

    Put the coconut meat into a pan and roast over low heat for a few minutes until the coconut meat turns golden brown, then add it to the mixture bowl along with the liquid vanilla, using a whisk to mix well.

  • Blend the whipping cream

    Next, add the heavy cream into the blender and blend until the cream is whipped. Then add the cooled coconut milk mixture from above, and continue blending until well combined.

  • Freezing the ice cream

    In the final step, you pour the cream mixture into a container and place it in the refrigerator for about 6 hours, then take the ice cream out. Use a spoon to scoop out individual ice cream balls onto a plate.

    Decorate the ice cream plate with peanuts, almonds, dried fruits, or chocolate chips… as you like to enhance the flavor. The fragrant and creamy taste of coconut milk and whipping cream will create an ice cream that is “extremely delicious” to eat.
