- Fresh squid has clear eyes, not bulging out, with the pupils clearly visible; the body and tentacles of the squid are firmly attached. Additionally, when you press on the squid, you will feel its firmness and elasticity.
- Do not buy if you see squid that is dull in color, soft and mushy, with tentacles and body easily separating, cloudy eyes, or leaking fluid, as it indicates the squid is spoiled and not fresh.

Prepare the ingredients

Peel and wash shallots, then chop finely. Soak dried mushrooms in warm water for about 10 minutes until they expand, then take them out, wash, let them drain, and chop finely.

- To clean squid and prevent it from being fishy, after cleaning the insides, soak the squid in water mixed with vinegar, lemon, or alcohol for about 10 minutes, then rinse with clean water to help eliminate the odor.

Mix and stuff the filling
Put into a large bowl the ingredients including minced squid head, minced pork, shallots, wood ear mushrooms, 2 tablespoons of seasoning, 1/2 tablespoon of salt, 1 tablespoon of sugar, 1/2 teaspoon of monosodium glutamate, a little ground pepper, and 1 tablespoon of cooking oil.
Wear gloves and mix the ingredients thoroughly. Marinate for about 15 minutes so that the filling absorbs the seasoning.
