How to prepare Sour Bamboo Shoot with Garlic and Chili

  • Prepare and soak fresh bamboo shoots

    After buying fresh bamboo shoots, peel off the old outer layers and rinse them with water.

    Next, use a knife to cut the bamboo shoots into thin slices along the length of the bamboo shoot and rinse them again with water.

    Soak the cut bamboo shoots in water with 2 tablespoons of salt. To keep the bamboo shoots white and crunchy while removing toxins, add about 500ml of rinsed rice water to the soak.

    Soak the bamboo shoots in the saltwater and rice water mixture for about 10 hours (overnight), then take them out and let them drain.

    To ensure the bamboo shoots remain white and crunchy, and to enhance the flavor, place the drained bamboo shoots in a bowl, and soak them with 1 cup of vinegar and 1 liter of water for about 30 minutes.

    After 30 minutes, when the bamboo shoots are whiter and crunchier, take them out and let them drain.
