Mixing the Dough
Sift 200gr of all-purpose flour, 30gr of almond flour, and 2gr of salt into a bowl.
Add 130gr of chilled unsalted butter.
Then crumble the butter into the flour mixture evenly. Next, add 60gr of cold water to the bowl and mix the dough thoroughly.
Put the dough into a plastic bag or cover the bowl with plastic wrap and refrigerate for about 1 hour.
Note:
- Butter should be softened at room temperature but should not be melted.
- You should sift the flour for smoothness before adding it to the bowl; this will make the mixture even tastier.
- Do not overmix the dough; just mix enough. Overmixing will make the dough tough, not soft and fluffy. The dough needs to be chilled for the tart to puff nicely.

Knead and roll the dough
Sprinkle a little flour on the clean table, apply some to the rolling pin to prevent sticking. Then place the dough on the table and roll it out to about 3mm thick.

Shape the cake
Line a piece of parchment paper in the mold
Place the dough piece in the mold, gently press the dough to fit the edges of the mold, then use a rolling pin to lightly cut off the excess dough. Place the dough in the refrigerator for another 30 minutes.
After that, take it out and use a fork to lightly poke round holes in the dough as shown.
Tip:
You should not make the base too thick, as the crust will become hard. After shaping, you should use a fork to poke small holes in the bottom of the mold so that when baking, the cake can release air and avoid puffing up.

Baking the crust
Preheat the oven for about 15 minutes before baking at 180 degrees Celsius.
Put the cake in the oven for about 20 – 30 minutes at 180 degrees Celsius for a crispy finish.
Tip: If the cake is not golden, increase the oven temperature by 150 degrees Celsius and bake for an additional 10 minutes.
