How to make Mango Gummy Candy

  • Prepare the ingredients

    Wash the mango, peel it, remove the seed, and cut the flesh into a large bowl. Then, use a spoon to mash the mango or put it in a blender to puree.

  • Heat the mixture

    Then, you add the pureed mango into the pot, place it on the stove, and heat the mango over medium heat while stirring constantly.

    Cook until you see the mango mixture bubbling gently, then add 80 grams of sugar along with malt syrup into the pot, and stir well.

    Cook for another 3 – 5 minutes, then add lemon juice, stir well, and turn off the heat.

  • Pour into molds

    After heating the mixture, quickly scoop the mango jelly mixture into molds and let it sit for about 1 hour for the jelly to cool completely.

    After the jelly has completely set and does not stick to your hands when touched, roll each jelly piece in the remaining sugar, then place the jelly into a clean jar, plate, or bowl with a tight lid to finish.

Orange 2 fruits Watermelon 100 grams Red-fleshed Dragon Fruit 1 fruit Green tea powder 7 grams Pure cocoa powder 10 grams (can be replaced with Milo powder) Milk coffee powder 16 grams Butterfly pea flowers 5 pieces Gelatin 175 grams Granulated sugar 100 grams Cornstarch 100 grams (or tapioca starch)

How to Make Fruit Jelly

  • Prepare Ingredients

    For the orange, squeeze to obtain about 150 ml of juice, then use a sieve and cloth to filter it.

    For the watermelon, cut off the skin, remove the seeds, and either juice or blend it to get the liquid. Then, you need to use a sieve and clean cloth to filter it again to obtain pure juice.

    Similarly, for the dragon fruit, cut out the flesh and juice or blend it to obtain the liquid.

    Next, take 7 grams of green tea powder, mix it with 200 ml of boiling water, and stir well until the powder is completely dissolved. Then, wait for 2 minutes to let the sediment settle and filter out the liquid from the top.

    Similarly, mix 16 grams of instant coffee with 150 ml of boiling water in a separate bowl, and mix 10 grams of cocoa powder with 150 ml of boiling water in another bowl.

    Finally, place the butterfly pea flowers in a small bowl, add 170 ml of boiling water, and wait about 15 minutes until the flowers release the desired blue color, then use a sieve and cloth to filter out the pure liquid.

    Note: If you find the dragon fruit juice too thick, you can add 100ml of cold water to make filtering easier.

  • Making fruit juice with Gelatin

    First, add 150 ml of dragon fruit juice and 25 grams of Gelatin powder into a pot. If there are any areas where the Gelatin has not dissolved, you can add small amounts of cold water to help the powder absorb the water faster. Note that Gelatin has a good gelling effect, so you must first dissolve the powder in cold water before proceeding with the next steps.

    Once you see that the Gelatin has fully absorbed the water, let the mixture sit for about 10 minutes, then place it on the stove to heat along with 100 grams of granulated sugar until it boils. Then reduce the heat and continue to cook for another 3 minutes before turning off the heat. While cooking, be sure to stir well to dissolve the sugar into the mixture and skim off any foam that rises (if any).

    Note:
    • If you use Gelatin, you only need to use 12.5 small pieces of Gelatin and add them in.
    • The principle of Gelatin is that it only dissolves in cold water, so you need to do this step carefully so that when heated, the Gelatin powder does not clump together and lose its gelling ability.

  • Pouring into molds

    Brush a thin layer of cooking oil onto the molds to prevent sticking. After heating the fruit juice mixture with Gelatin, pour this mixture into the molds and let it sit for 2 – 3 hours for the candy to set.

    Do the same with the remaining juice portions.

    When the jelly has set and reached a certain chewiness, take it out of the mold and cut it into bite-sized pieces.

    You can roll the jelly in sugar to make it tastier and to prevent it from sticking when placing it in jars.

    The jelly that meets the requirements will have a fragrant, rich, mildly sweet taste, vibrant colors, and no powdery clumps in the final product. You can enjoy the jelly as a snack or with a cup of tea, both are very delicious.

Tips for successfully making the dish:
  • When cooking gummy candy, you can add 10 -20 ml of lemon juice for a slight sour taste that makes the candy taste better.
  • After cutting the candy, if you try it and find it too hard, put the candy back in the pot, add 20 ml of water, turn on the heat to boil, then turn off the heat and put it back in the mold, wait for it to cool down. If the candy is too soft, put the candy in the pot, heat it until it melts, and cook for an additional 2 minutes before turning off the heat and putting it in the mold to cool.
  • To create a glossy finish for the candy, you can rub cooking oil on each piece, making the final product more attractive.
  • If you want to eat smooth gummy candy, just take 100 grams of cornstarch or tapioca flour, put it on the stove, and stir over medium heat for about 8 – 10 minutes. Then turn off the heat, transfer the flour to a large bowl to cool completely, and then roll the candy in it to coat. To make the candy taste better, you should sift off any excess flour on the candy.

How to store candy: Gummy candy can be stored in a glass or plastic jar with a tight lid at room temperature for 2 weeks. You can also place it in the refrigerator for longer storage.
