Prepare the fruits
Peel the tangerines completely.
Wash the strawberries thoroughly to remove dirt, and remove the stems.
Use a sharp skewer to pierce through the strawberries and tangerines.
Note: The tangerines are large and heavy, so you can use chopsticks to skewer them. A sharp skewer may cause the tangerines to fall off.

Make sugar syrup
Put 200 grams of granulated sugar into a pot, add 100ml of water.
Heat the sugar over medium heat until it melts.
Cook until the syrup turns a bright yellow color and thickens like syrup, then it can be taken out.
Note: Do not use high heat as it can easily burn the sugar.
Tip to check if the syrup is at the right consistency:
- Drop a few drops of syrup into a glass of ice water; the syrup will harden. Then, bite into the hardened syrup piece.
- If the syrup piece is crunchy and does not stick to your teeth, then the syrup is at the right consistency; if it sticks, continue cooking it on the stove.

Make candied fruit
You dip the skewers of strawberries and mandarins into the prepared syrup to coat the fruit evenly.
It is advisable to dip quickly and take them out immediately; if the fruit stays in the hot syrup for too long, it may become overcooked and not taste good.
Then let them drain for 1 – 2 hours for the outer layer of syrup to dry and become crispy.
Note: Depending on your sweetness preference, you can dip the fruit multiple times in the syrup to increase the sugar layer, making the candied fruit sweeter.
