How to choose fresh salmon fillet
- Choose salmon pieces that are bright pink or orange, as this indicates fresh fish. If the flesh turns darker, it means the fish is starting to spoil or is close to decomposition.
- Additionally, good quality meat will have excellent elasticity. When pressing your finger into the fish, if it leaves an indentation but quickly returns to its original state, the fish is still fresh.
- Observe the surface of the meat; it should be dry, not damp or leaking any strange fluids. The fat lines on the fish should be uniformly colored and bright, not dull or have brown spots.

How to choose ripe, delicious avocado
- Choose avocados with a slightly yellow stem core, indicating that the avocado is just ripe. Conversely, if the stem is green, the avocado is not ripe yet.

How to make Sushi Birthday Cake

Fry eggs and shred
First, dissolve 1 tablespoon of cornstarch in 2 tablespoons of water. Next, add 4 eggs and 2 tablespoons of the cornstarch mixture into a bowl and stir well.
Heat a pan on the stove, evenly coat the pan with 2 tablespoons of cooking oil and heat it up. Then, pour a thin layer of egg into the pan and spread it out, frying on low heat until both sides of the egg are dry and can easily be separated from the pan.
Finally, roll the egg up and use a knife to cut it into thin strips.

Prepare and slice salmon, avocado
Wash the salmon clean and pat it dry, then use a knife to thinly slice the salmon into pieces about 1/4 inch thick. Note that you should position the knife at a 45-degree angle for easier and more even cuts!
Next, peel the avocado and slice the flesh horizontally into very thin slices.

Arrange ingredients in the mold
Line the round mold with a layer of plastic wrap, then tightly arrange the bottom and sides of the mold with pieces of salmon (remember to leave some slices of salmon for decoration).

Finally, use your hand to spread a little wasabi on the surface of the rice and cover it completely with a piece of seaweed.

Invert the cake mold onto a large plate so that the layer of seaweed is at the bottom, then slowly lift the mold off the cake, removing the plastic wrap.
Sprinkle a little roasted black sesame and roasted white sesame on top of the cake. Next, use mayonnaise to draw many circles around the cake.
