How to choose good sweet potatoes:
- Buy sweet potatoes that are intact, not cracked or chipped. When holding the potato, it should feel heavy, firm, and not bruised. Avoid buying overly large potatoes as they tend to be fibrous; medium-sized potatoes are the best.
- If you want to buy sweet potatoes that are starchy, fragrant, and fluffy, choose those with a layer of powder or dirt on them.
- Be cautious if you see potatoes that are black or have blemishes, as this indicates that the sweet potatoes have spoiled.
How to prepare Sweet Potato Sticks

Prepare and steam the potatoes
Peel the purple sweet potatoes and the yellow sweet potatoes, cut them into round slices 1cm thick and place them in 2 separate bowls of water, each bowl mixed with 1/2 tablespoon of salt to prevent the potatoes from turning black and browning due to the sap.
Soak the potatoes for 5 minutes, then rinse them thoroughly with water, and put them in a colander to drain.

Steam the potatoes and mix the flour
Place the potatoes in a pot and steam them for 15 minutes until both types of potatoes are cooked.
When the potatoes are cooked, transfer them into 2 bowls, each for one type of potato, then add 1 tablespoon of sugar, a little salt, and 10g of unsalted butter to each bowl.
Use a fork to mash the potatoes with the seasonings just added. Beat an egg in a bowl and pour half of this egg into each bowl of mashed potatoes.
Add 3 tablespoons of rice flour to each bowl and mix well with a spoon. Use gloves to mix thoroughly until the flour and potatoes combine smoothly and can be shaped into long sticks. The smooth dough is placed into piping bags, each type of potato in a separate bag.
Tip: You can use chopsticks to check the doneness of the potatoes by seeing if the chopsticks can easily pierce through the potatoes, then they are cooked.
Note:
- When kneading the 2 types of potatoes, you need to change gloves to avoid mixing the colors together.
- If you don’t have a piping bag, you can substitute it with a plastic bag or shape the potatoes directly by hand!

Shaping and frying the cakes
Squeeze the sweet potato from the piping bag onto a tray, squeeze it out and then slowly pull it in a straight line. When shaping, you need to be decisive and not stop, as it will cause the sweet potato stick to break.
Sprinkle breadcrumbs over the sweet potato and roll it in the breadcrumbs to coat the surface evenly.
Pour cooking oil into the pan, ensuring there is enough oil to submerge the sweet potato when frying; once the oil is hot, add the sweet potato sticks and fry over medium heat. Fry until the breadcrumb coating turns golden, then remove to a plate lined with paper to absorb the oil.
