How to make Spicy Cassava Cake
-
Prepare the ingredients
Peel the cassava, wash it clean, and then soak it in water for 4 hours to reduce the sap.
After that, hold the piece of cassava at an angle and grate it on a grater to create a smooth dough.
Remove the seeds from the fresh chili and chop it finely.
Chop the green onions finely as well.
-
Mix the dough
After grating the cassava, proceed to squeeze out the sour water. Note that this squeezed water should not be discarded; let it settle, and use the settled starch to mix back into the cassava bowl.
Then proceed to mix the dough: Put the cassava into a large bowl, then add the prepared ingredients including bread crumbs, powdered cheese, crispy flour, fresh chili, chili powder, green onions, and finally the settled starch from above, and mix all together.
While mixing, season with a little salt, sugar, and seasoning to taste. If the dough feels dry, add a little water to create stickiness for the dough.
-
Fry the cake
Prepare a pan of hot oil and proceed to fry the cake.
Note that if you press the cake, it will become hard and not fry well, so use chopsticks to gently shape the dough before dropping it into the pan and fry on low heat until the cake is golden.
-
Final product
Remove the cake and place it in a basket lined with absorbent paper. When eating, serve with a little chili sauce to enhance the flavor of the spicy cassava cake.
The cake is considered successful when it is golden and crispy on the outside while still retaining its softness on the inside.
Tips for successful execution:
- The starch settled when squeezing the cassava to create a chewy texture for the cake.
- When frying, only gently shape the cake while there is still air inside, allowing the oil to seep into the gaps, resulting in tastier fried cakes.
- Do not fry at too high a heat, as the cake may burn on the outside while remaining uncooked inside. Please keep this in mind.
