  • Prepare and marinate the meat

    The pork bought should be washed thoroughly with water several times, drained, then cut into bite-sized pieces and placed into a bowl.

    Marinate the meat with: 1 packet of char siu marinade, 2/3 tablespoon of fried garlic, 1 tablespoon of malt syrup, 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1.5 tablespoons of sugar, 1/4 teaspoon of pepper, 1 tablespoon of mai que lo wine, mix well and marinate for about 15 minutes so that the meat absorbs the spices.

    • Method 1: You can blanch the meat for about 3 minutes in boiling water and then rinse it with cold water to prepare it.
    • Method 2: When boiling the meat, you can add 1 smashed onion to the boiling water for effective odor removal.

  • Making Char Siu

    Place a pan on the stove, add the marinated meat and the sauce, and stir-fry over high heat.

    Stir-fry until the meat is firm, then add 150ml of water and lower the heat to medium until the liquid reduces; then transfer the meat to a plate, let it cool, and cut into bite-sized pieces.

  • Boiling Sausages

    Add 300ml of water, 1/2 tablespoon of fried garlic, 1 teaspoon of sesame oil, 2 tablespoons of soy sauce, and 1 tablespoon of chili sauce to the pan, stir well, and bring to a boil.

    Next, add the sausages and cook for about 5 minutes to ensure they are evenly cooked.

    Gradually add 3 tablespoons of diluted cornstarch to the pan, stirring until the sauce thickens, then turn off the heat.

  • Blanch the noodles

    Put a pot of boiling water on the stove and add the dry noodles to blanch for about 1 minute, then take them out to drain, and place them in a bowl.

    Add 1/3 tablespoon of fried garlic to the noodles and mix well.

    Tips for blanching noodles to be chewy and not mushy:
    • Do not blanch the noodles for too long as it will make them mushy and too soft, which is not delicious. Blanch the noodles just until cooked.
    • After taking the noodles out, you can briefly rinse them with cold water to help them firm up, maintaining their chewiness without becoming too soft.

    Prepare a bowl, add some blanched bean sprouts and lettuce. Pour the sauce you just made into the noodle bowl, mix well and add to the lettuce bowl.
