How to Cook Beef Noodle Soup

Stewing the Beef
First, wash 1kg of beef bones thoroughly. To eliminate the beefy smell, boil water with 1 spoon of white wine, and 1 tablespoon of salt, then blanch the bones. After about 5 – 10 minutes, remove the bones, let them cool, and discard the blanching water.
Next, place another pot on the stove and add about 1.5 liters of filtered water along with the blanched bones to stew for about 1 hour to make the broth.
Wash the brisket and flank beef thoroughly and let them drain. Wait for the broth to boil, then add the brisket and flank beef, 1/4 of a pineapple, 1 radish, 1 diced onion, and 2 smashed lemongrass stalks into the pot with the bones, then season with 1 lump of rock sugar and 1 tablespoon of salt.
When the brisket and flank beef are cooked, remove them, the stewing time for the brisket and flank will be about 30 minutes.

Making the broth
After taking the meat out, pour in about 500ml of filtered water and continue to simmer over medium heat.
For the beef paste, shape it into small bite-sized balls, then drop them into the pot to cook.
Next, add 3 tablespoons of filtered water to 2 tablespoons of Hue shrimp paste, stir well, then let it sit for about 10 minutes, take the clear liquid and pour it into the broth pot.
Continue to season the pot with 1 tablespoon of fish sauce, 1 tablespoon of seasoning powder, and 1 tablespoon of pepper.
Wait until the broth comes to a boil, then add 1 teaspoon of MSG and turn off the heat.
Chop the remaining stalk of lemongrass finely, peel 5 shallots, and slice them. Then, add the lemongrass and shallots into a pan with 1 tablespoon of cooking oil and 1 teaspoon of chili powder to fry until golden and fragrant. Once done, turn off the heat and transfer the fried lemongrass and shallots to a plate.

With the brisket and shank beef, slice against the grain into bite-sized pieces, then arrange the meat on top of the noodles already in the bowl.
