How to Make Durian Yogurt

Cook Durian Sauce
Use a fork to separate the flesh of the durian. Then put the durian flesh into a pot, add about 1.5 bowls of water, stir well and cook for 5 – 7 minutes.
Add 90g of condensed milk (equivalent to 3/4 bowl of condensed milk), stir until the milk dissolves and cook for 3 minutes, then turn off the heat. Strain the durian sauce through a sieve to collect the liquid.
Tip:- You can increase or decrease the amount of durian according to your preference; if you can only eat a little durian, just use 1 segment, if you like durian, increase it to 3 segments.
- When straining the sauce, do not throw away the durian pulp but keep it for the next steps.

Mix durian yogurt
Add 1 pack of unsweetened fresh milk 220ml and 2 cups of yogurt into the durian sauce, stir well until the mixture is completely dissolved.

Put into jars
Wash the glass jars with hot water and let them drain. Pour the yogurt mixture into the jars, add the durian flesh on top and then cover with the lid.

Incubate yogurt
Put the yogurt into a pot, cover with a towel or cloth and place it under the sun for 8 hours (from morning to afternoon) to ferment the yogurt.
If there is no sunlight, incubate the yogurt with hot water following these steps:- Prepare a pot of water, bring it to a gentle boil and then turn off the heat. Place the yogurt jars in such a way that the water covers about 2/3 of the jars.
- Cover the pot and let it incubate for 7 – 8 hours before it’s ready to use.

- Additionally, while incubating yogurt, do not open it to check, move it, or disturb it, as it will ruin the batch of yogurt.

After incubating, put the yogurt in the refrigerator for 2 – 3 hours before it can be eaten!
