How to choose fresh sơn fish
- For this braised dish, you should choose small sơn fish with less bone, as they will taste better when braised.
- Choose fresh fish with clear body and eyes. When you press the flesh of the fish with your hand, it should still feel springy.
- Do not buy fish if you observe that the body is too soft and mushy, or not intact.
How to Prepare Grilled Son Fish

Prepare the Ingredients
First, wash the son fish thoroughly with diluted salt water, then rinse again with clean water and let it drain.
How to clean son fish without a fishy smell:- To clean and eliminate the fishy smell, soak the fish in rice water for about 15 – 20 minutes, then take it out, rinse with clean water, and proceed to cook.
- You can also use a mixture of salt and alcohol to soak the fish for about 10 minutes and then rinse with water.
- Alternatively, use ginger to remove the fishy smell; soak the fish with water and add a crushed piece of ginger, soak for about 5 minutes, then take it out and let it drain before cooking.

After peeling the shallots, wash the shallots and fresh chili, then pound them finely.
Next, prepare a pan to caramelize the fish sauce. Add 1 tablespoon of sugar and a little water to the pan and stir until dissolved.
Then, place the pan on the stove, cook the sugar-water mixture over low heat until the liquid thickens and turns a brown color.

Marinate the fish
Prepare another pan and add the fish into the pan.
Next, add the minced onion and chili from above, then gradually add 1 teaspoon of seasoning, 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 1 teaspoon of pepper, 2 tablespoons of fish sauce along with the caramel sauce into the fish.
After adding all the seasonings, mix well and marinate the fish for 30 minutes to allow the fish to absorb the flavors evenly.

Cook the fish stew
Before cooking the fish, add 2 tablespoons of cooking oil to the fish pan, then place the pan on the stove and cook the fish over high heat. When the fish pan starts to boil, add 4 tablespoons of boiling water to the pan, then reduce the heat and continue to cook the fish for 20 minutes.
Cook the fish until you see the sauce starts to thicken, at this point, the fish stew is complete. If you like it spicy, add a few fresh chilies and ground pepper to the fish, then turn off the heat.
