How to Make Fried Durian Cakes

  • Prepare the durian

    Separate the meat from the durian and remove the seeds. Then, use a fork to mash the durian until smooth. Add the condensed milk to the mashed durian and mix well to form a smooth mixture.

  • Prepare the crispy frying flour

    Put the crispy frying flour and sugar into a large bowl, then use a whisk to mix well. Gradually add clean water into the bowl and whisk continuously until the mixture thickens as shown.

    Note: Adjust the flour to a moderate level. Too thick flour will make the pastry thick, resulting in a non-crispy cake, while too watery flour will not soak into the pastry.

  • Wrap the cake

    Dip a little water, spread it evenly on the rice paper to make it a bit soft, which will make it easier to roll. Place 1 spoonful of durian filling in the center, use a spoon to spread it thinly in the middle, then fold the four edges of the rice paper to form a square or rectangular shape.

    Note: Do not soak too much water on the rice paper, as overly soft rice paper will be difficult to roll and may tear easily. After folding the cake, gently press on the corners of the cake to distribute the filling evenly.

  • Fry the cake

    Dip the durian cake into the prepared crispy frying flour. Pour enough oil to submerge the cake into the pan, heat the oil, then add the cake to fry, turning it evenly. Wait until the cake is golden on all sides, remove it and place it on a plate lined with absorbent paper.

    Note: Keep the heat low so that the cake turns golden evenly and becomes crispier.
