How to choose delicious frogs
- You should choose wild frogs, do not choose farmed frogs which are fat but have watery, soft meat and the taste is usually bland, watery.
- When choosing, look for frogs with the following characteristics: bright eyes, slender head and strong limbs, usually a white or yellowish belly, bright yellow or black spotted skin.
- Choose live frogs, do not buy frozen frogs, as these usually have bland meat and lack the characteristic aroma when cooked.
How to prepare Quang noodles with frog

Prepare and marinate the frog
Add 10g of shallots, 10g of purple onion, 15g of turmeric, 5g of green chili, 5g of garlic, and 10g of lemongrass into a mortar and pound into a paste.
Clean 500g of frog and let it drain.
Put the frog into a bowl, then add the pounded ingredients, season with 30g of sugar, 30g of oyster sauce, 15ml of fish sauce, 15ml of annatto oil, 2g of salt, 2g of pepper, and mix well to ensure the frog meat absorbs the spices.
Marinate the frog for at least 30 minutes.
Tips for cleaning frogs effectively, without smell
- After cleaning and removing parts like the backbone, internal organs, and veins from the frog’s legs, to prevent the frog from having a fishy smell when cooking, you should wash the frog with alcohol and ginger to effectively eliminate the fishy smell and disinfect.
- Alternatively, if you don’t have alcohol and ginger, you can wash the frog with vinegar and salt: this method will also eliminate the fishy smell but is not as effective as alcohol and ginger.

Cooking the broth
Blanch 500g of pork bones in boiling water and then wash them clean.
Put the blanched bones into a pot with 700ml of filtered water, bring to a boil, skim the foam to keep the broth clear. Then add 150g of onion, 50g of shallots, 30g of smashed lemongrass, and 20g of green onion tops to the pot, reduce the heat and simmer the broth for 30 minutes.
Tips for cleaning pork bones thoroughly, without odor
- The method to clean bones is very simple; you need to chop the bones into small pieces and then wash them with diluted salt water.
- It is advisable to blanch the bones and discard the first boiling water as this water is contaminated with the odor of the bones, which will make the broth less fragrant.

Stir-frying frog meat
Place a clean pot on the stove, heat 2 tablespoons of cooking oil, then add 20g of shallots, 20g of garlic chives, and 10g of turmeric to sauté until fragrant.
Next, add the marinated frog meat and stir-fry it until it’s firm. Then add the broth to the pot, season with 20g of rock sugar, 20ml of fish sauce, stir well and turn off the heat.
Note: If you like spicy Quang noodles, you can add minced chili while stir-frying. Do not use satay as it will make the Quang noodles lose their distinctive flavor.

Making meat sauce
First, prepare 120g of minced pork and 80g of minced frog meat.
Put 20ml of annatto oil in a pot, wait for the oil to heat up, then add 10g of minced shallots and 10g of minced garlic to sauté until fragrant.
Next, add the pork and frog meat to stir-fry until cooked.

Completion
Add 250ml of filtered water into the pot with Quang noodle sauce, season with 20g of sugar, 20ml of fish sauce, and 2g of pepper, then bring to a boil.
Dissolve 20g of rice flour with 1 tablespoon of filtered water, pour the flour mixture into the meat pot, and stir well. Reduce the heat and simmer gently until the meat sauce thickens, then add 10g of green onions and 10g of chili, stir well, and turn off the heat.

Note: When you buy Quang noodles, you can quickly blanch them in boiling water and then mix them with a little cooking oil to make the noodles soft and delicious, not sticky. Do not blanch for too long as it will make the noodles mushy.
