How to choose good pumpkin
- Choose pumpkins that are deep orange in color, feel heavy and firm when picked up, and have no bruises or scars.
- You should pay attention to choosing pumpkins with stems about 2 – 5cm long so that the pumpkin lasts longer and does not spoil quickly.
- Avoid buying pumpkins with spots or blemishes on the skin or showing signs of being soft, mushy, leaking, and having a strange smell.

How to make pumpkin floating rice cake

Prepare and steam the pumpkin
Peel the pumpkin, remove the seeds, then cut it into thin slices and wash it clean.
Prepare a steamer, place the sliced pumpkin in and steam for about 15 – 20 minutes until the pumpkin is soft.

Mix the dough
Put the steamed pumpkin into a bowl and mash it with a spoon.
Next, add 200g of glutinous rice flour into the bowl and mix well until it forms a smooth, elastic dough.
Tip: You should knead the dough by hand to feel the moisture or dryness of the dough to know whether to add more flour or water. -
Making the filling
Wash the mung beans thoroughly and soak them in water for about 30 minutes.
Place a steamer on the stove, add 50ml of coconut milk to the mung beans, and steam for about 10 – 15 minutes until the mung beans are soft and cooked.
Transfer the mung beans to a bowl, to enhance the filling’s flavor, add a little sugar and salt to the bowl, and use a spoon to mash the mung beans until very smooth.
Then, divide the mung beans into equal portions and roll them into balls.
Finally, use your hands to flatten the pumpkin dough and place the mung bean filling inside, then proceed to wrap the cake.
Tip: You can roll the leftover dough into balls and drop them into boiling water for an extra treat. -
Cook the syrup
Place a pot on the stove, add 500ml of water, then add 300gr of palm sugar and 10gr of ginger, and cook until the sugar completely dissolves.

Boil the cake
After the syrup boils, add the sticky rice balls and cook over medium heat for about 5 – 10 minutes until the balls are cooked and float to the surface, then turn off the heat.

Final product
The sticky rice balls are round, cute, and have a beautiful yellow color. When eaten, you will taste the sweetness of the pumpkin, which is both chewy and soft, blending with the sweet and savory green bean filling inside, creating a wonderful dessert.
You should serve it with a little coconut milk and some crushed peanuts for better flavor!
