Prepare the ingredients
Clean the octopus you bought and rub it with white wine or lemon to eliminate the fishy smell. Then rinse it with water and let it drain in a colander.
Wash the vegetables, chives, and bell peppers, then cut them into bite-sized pieces to stir-fry with the noodles.

Blanch the noodles
Put a pot on the stove to boil water, then place the noodles in a bowl and pour the boiling water over to blanch for about 1 – 2 minutes until the noodles are cooked, then remove and rinse with cold water and let drain.
Tip: To avoid the noodles being mushy when stir-frying, do not blanch the noodles for more than 2 minutes. -
