How to buy and where to find good quality rice paper

  • Choose rice paper that has good thickness and chewiness as this will create a better stickiness and chewiness when rolling.

How to choose fresh and delicious beef

  • Choose beef that is bright red, with light yellow fat, and has a characteristic aroma.
  • Choose pieces of meat that are small, tender, and have fine fibers. Press with your hand to feel the meat’s good elasticity.
  • If you see white, small nodules that are easy to detach from the meat, it is likely that the meat contains parasites, so it should not be bought.
  • Avoid buying meat that is bluish or dark red, with dark yellow fat, has white spots on it, is soft, and has an unusual odor.

How to make Pho rolls with rice paper

  • Prepare the ingredients

    Buy pre-cut beef from the market, wash it thoroughly, drain, and place it in a bowl. If you buy a whole piece of beef, rub salt on the meat, then wash it again with clean water, drain, and slice thinly.

    Marinate the beef with: 1 spoon of seasoning, 1 spoon of pepper, 1 spoon of five-spice powder, 1 spoon of minced garlic, 1/2 tablespoon of cooking oil, mix well and marinate for 15 minutes for the meat to absorb the flavors.

    Peel the carrot, wash it with cold water, then slice it thinly and place it in a bowl. Add 1 spoon of salt, mix well and marinate for about 15 minutes so that the carrot softens.

    Then rinse the carrot with boiling water and let it cool.

    Ways to remove the smell of beef

    Method 1: Soak the beef in white wine for 15 minutes, then rinse with clean water.

    Method 2: Put the beef in a pot of water, heat for about 3 – 5 minutes, then take it out and rinse to reduce the smell. Note that you should only heat to about 50 degrees Celsius, not boil.

    Method 3: Use lemon or vinegar to rub on the piece of beef for 5 – 7 minutes, then rinse with clean water.

    Method 4: Roast a piece of ginger, then pound it, rub it on the piece of beef, and rinse it clean.

  • Stir-fry beef

    Heat a pan on the stove with 1 tablespoon of cooking oil. When the oil is hot, add 1 teaspoon of minced garlic and sauté until fragrant.

    Next, add the beef and stir-fry until the meat is slightly cooked and firm.

  • Soak rice paper

    Take 2 pieces of rice paper, one piece to stay dry, the other piece soak in cold water until wet, then stack the 2 pieces on top of each other, pressing them together so they stick, then let them sit for about 10 seconds.

    Prepare a bowl of warm water at about 45 degrees Celsius, add 1/2 tablespoon of cooking oil, stir well, then add the rice paper you just made and soak for about 10 minutes before removing.

  • Prepare dipping sauce

    In a bowl, add: 100ml warm water, 3 tablespoons of sugar, 2 tablespoons of lemon juice, 5 tablespoons of fish sauce, 1 teaspoon of vinegar, 1 teaspoon of minced garlic, and 1 teaspoon of minced chili, stir well.

    Next, add the prepared carrots and stir well.

  • Roll the spring rolls

    After dipping the rice paper, lay it flat, fold both ends of the rice paper, then sequentially add beef, lettuce, cilantro, and mint, roll tightly and securely.
