How to Choose Fresh Snakehead Fish
- Fresh snakehead fish will have sparkling, clear eyes where you can see the pupil inside. Conversely, if the fish has cloudy, dull eyes, it is no longer fresh and should not be purchased! Because the flesh is no longer tasty.
- Additionally, you can check the gills of the fish to assess its freshness. If the fish is fresh, the gills will be bright red; if the fish is stale, the gills will be dark red or even brownish-black.
- You should avoid buying fish that feel a bit soft or dented when you gently press near the belly; they won’t bounce back.

Prepare the Snakehead Fish
To save time, buy the snakehead fish and ask the seller to clean it. When you get home, rinse it with water, using a little salt to rub on the fish’s body to remove the fishy smell.
Next, wash it thoroughly with water and then place it in a basket to drain.
Effective ways to remove the fishy smell
- Method 1: Soak the fish in rice water for about 15 – 20 minutes. Then take it out and rinse it with water.
- Method 2: Soak the fish for about 5 minutes in water with 3 crushed ginger slices.
- Method 3: Squeeze lemon juice into warm water, then soak the fish for about 5 – 7 minutes, and rinse it with water.

Marinate the fish
After the fish has drained, place it in a pot, then add a mixture of spices including: 1 teaspoon of coloring sauce, 1/2 teaspoon of pepper, 1/2 teaspoon of chili powder, 2 tablespoons of fish sauce, 2 teaspoons of sugar, 1/2 teaspoon of monosodium glutamate, 2 teaspoons of cooking oil, and a little water just enough to cover the fish.
Then marinate the fish for about 30 minutes for the fish to absorb the spices evenly.

Cook the fish
Put the pot on the stove to braise over medium heat, covering the pot to ensure the fish cooks evenly. When the fish boils, reduce the heat to low and uncover the pot, cooking for another 10 – 15 minutes until the amount of water in the pot reduces to about half and thickens, then turn off the heat.
You can slice some chili to add in if you like it spicy!
