Prepare the pork
For whole cuts of meat, to clean and eliminate odors, soak the meat in diluted salt water for about 10 – 15 minutes, then rinse thoroughly with clean water several times.
Proceed to cut the meat into small pieces and then mince finely.

Prepare other ingredients
You wash the wood ear mushrooms with clean water, then soak them in cold water for about 1 hour to let the mushrooms soften. When the mushrooms have expanded evenly, wash them again with water, cut off the stems, and proceed to chop them finely.
Cut off the roots and damaged leaves of the green onions, then chop them finely. Peel the red onions, wash them clean, avoiding any moldy parts that could be harmful to health, and chop the red onions finely.
Wash the chili peppers and slice them diagonally.

Mixing and marinating the meat mixture
Add 400 grams of pork along with minced shallots, soaked wood ear mushrooms, and the egg whites of 4 salted duck eggs into a large bowl. Separate the egg yolks and set them aside. You can use the eggshells to make it easier to separate the yolks. Then mix the mixture well.
After mixing, add 2 egg yolks into the mixture and continue to mix well to enhance the richness of the dish.
Season the mixture with 2 teaspoons of sugar, 1 tablespoon of seasoning powder, 1/3 teaspoon of monosodium glutamate (you can skip the monosodium glutamate if allergic), and 1/3 teaspoon of ground pepper. Then mix the mixture well. Marinate the mixture for 15 – 20 minutes for better flavor absorption!

Steamed Eggs
Prepare about 7 small cups and evenly brush cooking oil into the cups, or you can replace the small cups with a stainless steel tray. This step of brushing with oil prevents the meat from sticking when taken out.
Pour the mixture into the small cups, do not fill the cups completely as it will overflow when cooked.

Make the coloring mixture: put 2 fresh chicken egg yolks into a cup with 1 teaspoon of sugar and 2 teaspoons of sesame oil, then mix well. After steaming the small cups of meat-egg mixture over high heat for 20 minutes, brush the coloring mixture on the meat-egg cup to make it look more appealing and steam for an additional 5 minutes.
