Prepare Pork Leg
After purchasing the pork leg, briefly roast it over a fire to singe off the hair, or you can also use a knife to scrape off the hair, then rub it with salt to eliminate the odor, and finally rinse it with clean water.
How to clean pork leg without odor
- Method 1: Blanch the pork leg in boiling water for about 2 – 3 minutes, then rinse with cold water. This method will help to remove the odor from the pork leg.
- Method 2: Take about two tablespoons of lemon juice (vinegar, alcohol) and rub it on the surface of the pork leg, let it sit for about 2 – 3 minutes and then rinse clean with cold water.

Prepare Other Ingredients
Wash the lemongrass, remove the leaves. Then, take half of the lemongrass, smash it and chop finely, while cutting the remaining part into sections.
Peel the garlic and shallots, wash them clean, and chop finely. Whole soybean sauce chop finely and place in a bowl.
Wash the green onions and cut into sections. Peel the onion, wash it, and cut it into wedges. Wash the coriander and chop it finely.
Crush 100g of roasted peanuts, leaving the rest whole. Wash 2 chili peppers and then chop them finely.
Soak the wood ear mushrooms in water for about 30 minutes until they swell, then cut off the stems. After that, slice them thinly.

Marinating the pork leg
Use a knife to chop the pork leg into bite-sized pieces and place them in a large bowl to prepare for marinating.
Then, start marinating the pork leg with 1/2 of the minced lemongrass, a few stalks of lemongrass cut into sections, 1/2 tablespoon of five-spice powder, 1 tablespoon of seasoning powder, and 1/3 tablespoon of sugar.
Continue adding 1 cup of fermented soybeans, 1/2 of the minced shallots, 1/2 of the minced garlic, 2 tablespoons of curry powder, and 1/3 can of coconut milk to the bowl, then mix well and marinate for 1 hour for the pork leg to absorb the spices.

Stir-frying
Place a pan on the stove, wait for the pan to heat up, then add 1 tablespoon of cooking oil. After that, add the remaining minced shallots and garlic to sauté until fragrant, then add the remaining stalks of lemongrass to the pan and stir-fry until aromatic.
Next, add the marinated pork leg to the pan and stir well. Stir-fry over medium heat until the meat is firm.
Now, pour in 500ml of coconut water and cook over high heat until it boils and starts to reduce slightly, then add the mushrooms and onions. Simmer for about 10 – 15 minutes on low heat to allow the water to soak into the pork leg.
Finally, add 1/3 can of coconut milk, cook for another 5 minutes, and adjust the seasoning to taste before turning off the heat.

Prepare the dipping sauce
Add all the remaining minced lemongrass and 2 chopped chili peppers, 1/2 cup of fermented soybean paste into the mortar, then use the pestle to pound them finely and scoop them into a bowl.
Next, add all the previously pounded peanuts into the mixture with the lemongrass and chili, then add 1/3 can of coconut milk and mix well. Now the dipping sauce is ready.

Scoop the pork leg into a bowl and sprinkle the remaining roasted peanuts and cilantro on top to enjoy right away.
