How to choose fresh and delicious cabbage
- You should choose cabbage heads that have a light green color at the top and gradually white from the stem to the root, with bright colors, intact leaves, and not too large in size.
- Avoid choosing cabbage that is dark green, as it is often old, not sweet, and crunchy.
- Limit purchasing cabbage that is bruised, wilted, or has an unusual smell, as they may have been stored for too long and are not fresh.
How to make Sweet and Sour Pickled Cabbage

Prepare the saltwater
Put 1 liter of water into a pot, add 30g of salt (about 3 tablespoons), and stir well until the salt dissolves.

Soak the cabbage in saltwater
Remove the stem from the cabbage you bought, cut it into bite-sized pieces about 2 finger lengths long.
Then soak it in the prepared saltwater for about 1 hour and rinse 2 – 3 times with water, then drain.

Making Fish Sauce
Peel the garlic. Remove the stems from the bird’s eye chili and the long chili, then wash them thoroughly.
Peel the ginger and slice it. Squeeze the juice from 5 limes into a bowl.
Put the garlic, long chili, and bird’s eye chili into a mortar and pound them finely, then add 190g of brown sugar, lime juice, 210ml of fish sauce, 40ml of chili sauce, 60ml of soy sauce, and 400ml of water.
Stir the mixture well until the ingredients dissolve to complete the fish sauce.

Mixing Mustard Greens
At this point, the mustard greens have drained; you should put them in a pot, add the sliced ginger, and pour all the fish sauce mixture into the pot.
Wear plastic gloves to gently mix everything, then place it into a glass jar, and store it in a cool place for about 1 – 2 days before enjoying!
