How to choose good chicken
- Good chicken has thin, smooth skin, light yellow color, with some areas like breast, wings, back being darker yellow.
- Fresh chicken meat has a rosy, bright color. When touched, it feels smooth and has high elasticity.
- The meat has a characteristic aroma; do not choose chicken with a foul or strange smell. Choose lean chicken meat or deboned pieces, then remove the skin and fat to get chicken fillet.
How to make Cheese Chicken Balls

Prepare the chicken
Fillet the chicken, slice it very thinly, then chop it finely or you can put it in a blender to save time. At this step, you should not blend the chicken too finely.
Marinate with 1 tablespoon of fish sauce, 1/2 tablespoon of pepper, 1 tablespoon of seasoning, then place it in the freezer for about 1.5 – 2 hours. -
Marinate the chicken
Divide the marinated chicken into 2 equal parts, add 1/2 tablespoon of cooking oil, 2 tablespoons of cornstarch, then blend for 2 – 3 minutes.
Take it out into a bowl, then add 100g of cheese powder and thyme leaves, mix well until the chicken is smooth and absorbs the spices.Scoop out 1 tablespoon of the chicken mixture, flatten it, cut the mozzarella cheese into cubes of 2 – 3cm depending on your preference, then place the cheese in the middle and roll it into a ball.

Fried Chicken
Crack 2 eggs into a large bowl. Place the crispy flour and breadcrumb flour onto 2 separate plates.
Dip the chicken balls sequentially into the egg bowl, then into the crispy flour, and finally into the breadcrumbs.Heat a frying pan with enough oil to submerge the shaped chicken balls. When the oil is hot, add the chicken balls and fry for about 2 – 3 minutes.
Use chopsticks to gently turn the chicken balls to prevent them from breaking. Fry until they are evenly golden, then remove and place them on a plate lined with paper towels or absorbent paper. -
