How to choose fresh rươi
- You should choose rươi that are medium-sized (not too big and not too small), bright pink in color, and still wriggling.
- When buying rươi, you should select those that are on the surface, as they will be fresher and tastier.
- You should avoid buying rươi that are small, very thin, moving weakly, and not active, as these are rươi that are about to die.
- You should look for rươi at reputable seafood markets, supermarkets, or grocery stores to ensure the quality of the rươi.
How to choose good bamboo shoots
- You should choose bamboo shoots that are slightly coarse in shape, straight, not bent, fresh, with thin skin, not wilted, firm to the touch, and have a distinctive aroma.
- You should not choose bamboo shoots that have strange foul smells, an unusual color on the outer skin (too white or brownish-yellow), a surface with spots, yellow and rotten leaves, as they may negatively affect health.

Processing rươi
For fresh rươi, after purchasing, place the rươi into a basin, mix warm water at about 60 degrees, and then add the rươi. After that, gently stir a few times with chopsticks to let the mud, dirt, rươi’s hairs, and dead rươi float to the surface, then remove them, and rinse the rươi thoroughly with water and let it drain.
For frozen rươi, you should transfer the rươi from the freezer to the refrigerator to thaw gradually and then process it like fresh rươi.
Tip:
- Do not wash too vigorously to avoid breaking the rươi, which would affect the quality of the final product.
- For frozen rươi, do not use soaking in water or a microwave to thaw as it will make the rươi meat prone to bacterial contamination, posing a health risk.

Prepare other ingredients
To reduce the bitterness and ensure safety for health, bamboo shoots should be peeled. Boil the bamboo shoots in a pot for about 5 minutes, then take them out, let them cool, and cut them into strips.
How to prepare fresh bamboo shoots without bitterness, crisp and delicious:
- When you buy them, you should peel them, boil several times and rinse with cold water.
- You can boil 2 – 3 times and then soak them in rice washing water for about 2 days. You should change the rice washing water several times to prevent the bamboo shoots from spoiling.
- When you buy bamboo shoots, you can leave the skin on, boil the bamboo shoots with rice washing water and add a few slices of seedless chili for about 2 – 3 times.

Starfruit is washed, and the skin between the starfruit is rubbed with hands. Then use a knife to peel off the fiber on the edge and cut the starfruit horizontally into thin star-shaped slices.
Tomatoes are washed, halved, and then sliced thinly horizontally.
Orange peel is washed, cut into strips, and then chopped finely.
Tip:
- You can use either fresh or dried orange peel.
- When added to soup, orange peel helps eliminate fishy odors and toxins in the rươi, while also making the soup more fragrant.
- However, only a small amount should be used, do not use too much as it may make the dish bitter.
Dill, coriander, green onions, Vietnamese mint, fresh ginger leaves, and betel leaves should be washed and then chopped finely. Shallots are peeled and chopped.

Mix the ingredients
After cleaning the Rươi, place it in a large bowl, crack 2 eggs into the bowl, then add minced pork, dill, Vietnamese coriander, green onions, shallots, rice paddy herb, fresh ginger leaves, finely chopped betel leaves, 1 tablespoon of fish sauce, and 1/2 tablespoon of seasoning powder into the bowl.
Tip: Adding eggs to the Rươi filling helps create stickiness, enhances flavor, and prevents the filling from becoming dry or crumbly.
Use chopsticks to gently stir and mix the ingredients well so that they combine.

Cooking the soup
Place a pot on the stove, add 1 tablespoon of cooking oil and heat it up, then add the fresh bamboo shoots cut into strips into the pot and stir for about 2 minutes until the bamboo shoots release their aroma, then add 2 liters of filtered water to the pot, cover it and bring to a boil.
Next, add tomatoes and starfruit into the pot. Use a ladle to scoop out a sufficient amount of rươi paste and gently dip it into the pot until the rươi paste firms up and is cooked, then remove the ladle, and repeat this step until all the rươi has been prepared.
Tip: Avoid placing all the rươi paste directly into the pot as it may cause the rươi paste to break apart and the soup to become cloudy.
After adding all the rươi paste into the pot, continue to cook until the broth comes back to a boil, then add 1 tablespoon of fish sauce and 1/2 tablespoon of salt powder to the pot, stir well and turn off the heat.

Scoop the soup into a bowl, sprinkle some ground pepper, and decorate it nicely to complete.
