How to choose fresh and delicious mulberries
- Ripe mulberries will have a red or dark purple color, small fruit, with a shiny and firm skin. When squeezed, they should still be hard and not mushy.

How to make Mulberry Yogurt – yaourt dâu tằm

Mix and make yogurt
Add 380g of condensed milk and 1 liter of boiling water into the bowl, then stir until the milk cools to about 70 degrees Celsius.
Then, add 500ml of unsweetened fresh milk and 200g of yogurt, and continue to stir well.
Next, add a little warm water into the rice cooker, then place the yogurt bowl inside and incubate for 8 hours. You can also incubate yogurt by placing it in a thermos box, covering it tightly, and incubating for at least 8 to 10 hours!
How to incubate yogurt without being slimy:- Let the milk cool to 40 – 50 degrees Celsius before adding the yogurt starter and stir well to dissolve.
- Take the yogurt starter out of the refrigerator 2 hours beforehand. Do not use frozen yogurt to make the yogurt starter.
- Do not incubate for too long at temperatures lower than necessary. It is best to maintain a temperature of 40 – 45 degrees Celsius while incubating.

Prepare and marinate the mulberries with sugar
Wash the mulberries thoroughly, remove all the stems from the top of the fruit, then place them in a bowl with 125g of sugar and a little salt. Mix the mixture well and marinate for about 1 hour until the sugar dissolves and seeps into the mulberries.

Place a pot on the stove, add the mulberry mixture, and cook over medium heat until the mulberries are soft and mushy, and the mixture boils and thickens, then turn off the heat.
