How to choose fresh and delicious cucumbers

How to make Pickled vegetarian cucumber

Soak cucumber with salt
Wash the cucumbers thoroughly and let them dry.
Then, place the cucumbers in a basin, layering them with salt. Once you finish with the cucumbers, use a heavy object to press down for about 3 – 4 hours.

Chop and soak cucumbers a second time
After nearly 4 hours of soaking with salt, take the cucumbers out and cut them into bite-sized pieces, then place them in a cloth bag, and continue to use a heavy object to press for an additional 45 – 60 minutes to allow some water to drain out.
Next, the drier the cucumbers are, the crunchier they will be.

Prepare the cucumber soaking mixture
Heat a pan and add cooking oil. When the oil is hot, add 2 tablespoons of sugar, 1 tablespoon of chili sauce, 1 tablespoon of chili powder, and 2 tablespoons of soy sauce. Stir the mixture until you feel the thickness of the seasoning, then turn off the heat and let it cool.
