Ingredients for Octopus Cheese Serves 3 people

Tip: If you don’t have a clay pot, you can still use regular pots, but it’s better to choose thicker pots so that the dish is more fragrant and retains its appealing heat.
How to choose fresh octopus
- For live octopuses, choose those that are still flexible and move quickly; avoid those that move slowly and have dull eyes.
- For frozen octopuses, choose those with a natural gray-brown color, with moderate coloring that is not too dark or too light.
- Freshly frozen octopus should have bright white flesh, smooth skin, and especially not be swollen.
How to prepare Cheese Octopus

Prepare the octopus
For this dish, you should use whole large octopuses to make it more appealing. If you cannot find large octopuses, you can still use smaller ones.
After purchasing the octopus, wash it with a little diluted salt water to reduce the fishy smell, then rinse it with clean water (no need to cut it into small pieces) and let the octopus drain.

Prepare other ingredients
Boil a pot of water to cook the quail eggs, enough water to fully submerge the quail eggs.
When the water boils, add the quail eggs and cook on low heat for about 5 – 7 minutes to prevent the quail eggs from cracking.
Slice the onion into small pieces along the vertical of the bulb, about 0.5 – 1 cm thick.
You can easily buy corn that has been stripped of its husk on the market; if not, you should remove the husk and silk, then rinse with water. After that, use a knife to cut the corn kernels to save time.
Boil a pot of water and add the kernels just separated to cook for about 5 minutes until the corn is tender. Then remove and let the corn drain.
Cut the cheese into small strands along the length of the cheese stick so that they melt quickly during cooking. If using cheese blocks, you just need to grate it into strands.
Wash the chili with water and then chop it finely. Peel the garlic, crush it, and then finely chop it.
Trim the roots off the green onions, wash them with water, and then chop them finely.
How to quickly peel quail eggs
- First, gently crack both ends of the egg and roll it lightly on a hard surface like a stove or cutting board.
- For quail eggs, you can lightly tap the shell with a spoon or gently flick it with your fingers to break the shell.
- Additionally, you can place the eggs in a large bowl, cover it with a lid, and then shake it well to break the shells.
- Finally, peel off the shell and the inner membrane to complete the process.
- You should add a little salt when boiling the eggs to prevent the eggs from overflowing when cooked.
- Also, do not overcook the eggs; overcooked eggs will cause the shell to crack and sometimes stick to the inside, making them difficult to peel.

Make the sauce
Prepare half a cup of filtered water, add 3 teaspoons of chili powder and 2 tablespoons of sugar, and then stir gently.
Add another 3 teaspoons of ketchup and 3 teaspoons of Korean chili sauce, then stir well until everything is combined to complete the delicious sauce.
Tip: If you cannot prepare Korean chili sauce, you can use regular chili sauce, but the flavor will be different. You can also adjust the ratio of the ingredients above to suit your taste.

Fry the octopus
Place a pan on the stove and pour in about 1 small cup of cooking oil and heat it.
When the oil is hot, add the octopus and fry it over high heat until the octopus is golden but doesn’t lose too much water. Fry until the octopus is evenly golden, then turn off the heat.

Cheese Octopus
Prepare 1 earthen pot, then add 1 tablespoon of cooking oil and heat it on the stove.
Add minced garlic, chili, and onion in turn, mix well, and sauté until fragrant.
When everything is fragrant and the onion starts to soften, pour the prepared sauce mixture into the pot and continue to bring it to a boil.
Simmer on low heat, then add the boiled corn, followed by the octopus, then add quail eggs and simmer for about 2 – 3 minutes.
Finally, add the shredded cheese into the pot and continue to cook for another 3 – 5 minutes until the cheese melts, then add chopped green onions to finish.
