Ingredients for Mini Cheese Cake For 3 cakes

How to make Mini Cheese Cake

Sift the cake flour
Sift 60gr of cake flour and 12gr of cocoa powder into a bowl and mix well.

Beat whole eggs
Put 3 chicken eggs, 1 egg yolk, 72g sugar, and 18g honey into a bowl. Stir well until the mixture is combined and the sugar dissolves.
Next, place the bowl over a pot of warm water (the bottom of the bowl should not touch the water) and stir until the mixture is warm, reaching 40 degrees Celsius.
Tip: Warming the eggs makes them fluffier.
Use a hand mixer to beat the mixture at medium speed until the eggs form bubbles. Then increase to high speed and beat until the mixture is thick and smooth.
Finally, beat at low speed for 1 minute until the beaters can lift out the mixture in a ribbon-like flow, then stop (Ribbon Stage).

Mixing the cake batter
Divide the batter mixture into 3 portions, adding each portion to the whipped eggs, then use a flat whisk to gently mix the mixture from the bottom to the top. Bring the whisk down to the bottom of the bowl, push the heavier ingredients up, and fold them to the side. Continue this process until the mixture becomes smooth.
Next, add a little of the mixed batter into 12g of melted unsalted butter in a water bath, and mix well. Then pour this mixture back into the batter and use the flat whisk to mix until the butter is well incorporated.
Note: Mix the first batch of batter well before adding the second batch for further mixing. Avoid adding everything at once as it will cause the mixture to not blend evenly. -
Baking the cake
Preheat the oven to 180 degrees Celsius for 10 minutes.
Line the baking pan with parchment paper and pour the batter into the mold, baking at 180 degrees Celsius for 12 – 15 minutes.
After baking, place the cake on a cooling rack to cool down. Use a round mold to cut it into several pieces.
Note: Each cake will consist of 3 pieces, so you can utilize the leftover cake crumbs to piece them together. -
Whip the cream cheese
Add 300g of cream cheese to a bowl, use a hand mixer to beat at medium speed until the cream is smooth and creamy.
Then, add 90g of sugar, continue to beat for about 20 – 30 seconds until the mixture is well combined.

Whip the fresh cream
Add 300g of whipping cream to a new bowl, then place this bowl into a bowl of ice water.
Use a hand mixer to beat the mixture at medium speed until the cream is whipped to stiff peaks, thick, and the whisk creates peaks that don’t droop.

Mix the cream cheese mixture
Divide the fresh cream mixture into 3 parts, gradually adding each part to the cream cheese, and use a mixer to blend the mixture until well combined.
Note: Do not whip for too long as it will cause the cream to separate. -
Dye and assemble the cake
Take 1/5 of the cream cheese mixture into a small bowl, and refrigerate the remaining part.
For each layer of cake, spread a layer of syrup on top, then cover with a layer of cream and continue repeating until you have enough 3 layers of cake. After that, use a thin layer of white cream to cover the sides of the cake.
Next, take the remaining cream cheese and divide it according to the colors you want to decorate with. Then, evenly spread a layer of base cream over the cake.
Tip:
- For the white cream inside, you just need to cover enough to bond the layers of cake tightly together.
- If you do not have syrup, you can mix sugar with water in a 1:2 ratio.

Decorate the cake
Use different colors to create patterns for the cake, sprinkle candies or rice flakes on top.
