How to choose fresh and delicious sea snails
- You should choose snails that are still alive, with the body tightly attached to the shell, and the meat of the snail still has a certain level of moisture. When disturbed, they will retract into the shell.
- Check the snails near the outer shell; if you touch them, they will reflexively close up.
- Do not buy snails with soft, mushy bodies and shells that are deeply retracted into the shell, as they are likely dead.

Prepare the ingredients
Wash the sea snails thoroughly to clean the outer shell and soak the sea snails for about 2 – 3 hours to allow them to expel dirt, then rinse with clean water about 1 – 2 times to ensure they are completely clean.
How to soak sea snails to remove all dirt
- Method 1: Soak sea snails in rice water: Soaking sea snails in rice water can help remove dirt more effectively.
- Method 2: Soak sea snails with a few slices of chili: Soaking sea snails in a basin of water with a few slices of chili will help them expel the mud inside more quickly.
After soaking the snails, rinse them with clean water 1 – 2 times to ensure they are completely clean.
Wash the lemongrass, take 3 stalks to crush, and cut them into pieces about 2 – 3 finger joints long. The remaining 2 stalks should be cut diagonally into thin slices.
Wash the chili pepper, crush it, and cut it into 2 or 3 pieces as desired.

Steam razor clams with lemongrass
Place a pot on the stove. Lay crushed lemongrass cut into pieces at the bottom so that when steaming, the lemongrass will release its aroma, making the dish tastier.
Add the razor clams along with the diagonal-cut lemongrass and chili. Add 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning, 1/4 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, 1/2 teaspoon of ground chili, and 1/2 cup of water.
To enhance the aroma of the steamed razor clams, add 1 teaspoon of sesame oil, then turn on the stove and set it to the highest heat. When the water boils, cover the pot and then reduce the heat. Steam for 5 minutes until the razor clams are cooked.
Tip:
- Placing crushed lemongrass underneath the clams will allow the lemongrass to release its fragrance, making it very aromatic.
- Put the lemongrass and chili on top so that when steaming, the razor clams retain their chewy texture, sweetness, and inherent flavors.
