The fat should be bright, firm, and have a characteristic smell. The joint bones should be smooth and clear. The bone marrow should cling tightly to the wall of the bone and be transparent.
- Elasticity: Press your finger into the meat and release it. If it does not leave a fingerprint, the meat is elastic quickly and has a pink-red color, then it is fresh meat; if it leaves a fingerprint, the meat is spoiled and should not be purchased!

How to make Fried Meatballs with Garlic and Chili

Marinate the meat
Marinate 20 grams of minced shallots, 1/2 spoon of pepper, and 10 grams of cornstarch with minced pork, mix well so that the meat absorbs the spices evenly.

Shape the meatballs
Take a moderate amount of meat, use your hands to roll it into a ball, then flatten it. Make sure to form them tightly so that they do not break or crumble while frying.

Fry the meat
Place a pan on the stove, add 3 tablespoons of cooking oil. When the oil is hot, add the meatballs and fry until they are golden brown on both sides, then remove them.

Making garlic chili sauce
Place another pan on the stove, add 2 tablespoons of cooking oil. Once the oil is hot, add 10 grams of minced garlic and sauté until fragrant.
After the garlic is aromatic, add 3 tablespoons of fish sauce, 1 tablespoon of sugar, and 1/2 teaspoon of seasoning powder into the pan. Stir well to dissolve all the seasonings.
