How to choose delicious and quality split green beans
- To ensure the cake is flavorful, you should buy packaged split green beans sold at reputable stores.
- When buying green beans, pay attention to the production date, expiration date, and related information printed on the product packaging.
- Good split green beans will have a light yellow color, bright hue, and evenly sized beans.
- Absolutely do not buy green beans when you see black, brown, or dark-colored beans mixed in as they may be old or spoiled.
How to choose fresh pandan leaves (pandanus leaves)
- You should choose pandan leaves that are dark green, still fresh and intact.
- Fresh pandan leaves have a light, distinctive fragrance when smelled, and the leaves are thick and long.
- Do not buy pandan leaves that are light in color as they are young leaves, not fragrant, and their color is not as beautiful as that of older pandan leaves.
- Avoid selecting leaves that are bruised, wilted, or have larvae or eggs of insects attached underneath the leaves.

Cook and grind mung beans
You take peeled mung beans, wash them clean, and soak them in water for 6 hours until soft. Then, take the beans out and steam them over medium heat for about 20 minutes until cooked.
Put the cooked mung beans into a blender, add about 2 tablespoons of water, and blend at medium speed for about 3 minutes until smooth.

Extract pandan leaf juice
Wash the pandan leaves thoroughly, chop them small, and put them in a blender with 1 cup (rice bowl) of water, then blend until smooth.
Strain the blended pandan leaves through a sieve to extract the juice.

Mixing the dough for steamed pandan cake
Prepare 2 bowls, one for 250g of rice flour, 250g of tapioca flour, 250g of glutinous rice flour, 250ml of coconut milk, 100g of sugar along with pandan extract and stir well until the flour is completely dissolved. If the mixture seems too dry, you can add more cold water.
In the other bowl, also add 250g of rice flour, 250g of tapioca flour, 250g of glutinous rice flour, 100g of sugar, 250ml coconut milk and the mashed mung beans, then stir well until the flour is completely dissolved.
To make the dough smoother, you should strain these two mixtures through a sieve before steaming the cake.

Steamed Pork Skin Cake
Brush about 1 teaspoon of cooking oil evenly over the surface of the mold. Boil water over high heat in the steamer, heat the pot for 5 minutes, then place the cake mold in to warm it for about 2 minutes.
Remove the cake mold, gradually pour the mixture with pandan leaves into the mold, pour a thin layer about 1 ladle, put it in the steamer with medium or high heat for about 5 minutes. You can use a toothpick to poke into the mixture; if it comes out clean, the batter is cooked.
After the first layer of batter is cooked, reduce the heat, open the lid, and pour another layer of mung bean batter on top, then continue to raise the heat to medium or high and steam for another 5 minutes.
Repeat the process of layering pandan batter and mung bean batter until the mold is full or you run out of batter.
Remove the cake mold from the steamer, to easily take the cake out of the mold, place the cake mold into a bowl of cold water (make sure no water spills into the cake) and wait for the cake to cool down before removing it, cut it into small pieces and enjoy.

Finished Product
