How to choose good beef:
- Choose fresh meat with no dark red color, small and tender fibers.
- Avoid large and tough fibers. Beef fat should be bright yellow, with white and firm tendons; soft fat should not be chosen.
- Gently press the meat with your fingers to feel its good elasticity. If it doesn’t stick to your hand and has no unpleasant smell, you can select fresh beef for cooking.

Making Tamarind Peanut Sauce
Add 2 tablespoons of cooking oil to a hot pan, then add 15g minced garlic, 15g minced shallots, 15g minced lemongrass, and 10g minced chili, sauté until golden and fragrant. Next, add 150g roasted peanuts (crushed) and stir-fry until hot and aromatic.
Then, add 200ml of tamarind juice, 150g of peanut butter, 100g of dark soy sauce, 50g of sugar, 50ml of fish sauce, mix the ingredients well, wait for the mixture to boil for about 5 minutes, then turn off the heat.
