How to prepare Sardine noodles with fish cake

  • Preparation of ingredients

Buy fish cakes, rinse them once with water, then blanch them in boiling water for about 5 minutes, then cut them into bite-sized pieces and drain. Next, you can either boil or fry the fish cakes until cooked.

Wash the tomatoes, and cut them into wedges. Peel the pineapple, remove the eyes, and use a knife to cut it into thin slices.

Make pickled onions: Peel and wash the red onions, slice them thinly, and then blanch them briefly in boiling water for about 3 minutes. Then place the onions in a bowl, mix well with 1 tablespoon of sugar, 2 tablespoons of lime juice, and add chili if you like it spicy.

How to prepare Sardine Noodle Soup

  • Prepare the ingredients

For the pineapple, you can buy a whole pineapple and peel it at home, removing the eyes, or you can buy pre-peeled ones at the market or food stores.

Next, use a knife to cut the pineapple into small, bite-sized slices.

Peel the onion, then cut it into wedges and separate into small sections with your hands. Wash the tomatoes and cut them into wedges.

How to cut onions without making your eyes sting

    • If you are afraid of cutting onions and it stings your eyes, you can chew on a bit of bread while cutting the onion. The mouth movement helps minimize the amount of onion juice that splashes into your eyes effectively.
    • Since the structure of onion flesh is tubular, cut the onion across to avoid droplets splashing into your eyes.
    • Before cutting, you can soak the onion in saltwater or paper; the acidic nature or ionic properties in vinegar and salt can denature the enzymes in the onion, reducing its pungency.

See details: 10 tips for cutting onions without stinging your eyes

For accompanying vegetables like shredded water spinach, basil, and bean sprouts, after purchasing, remove any old or damaged parts (if any), then soak them in diluted saltwater for about 5 – 10 minutes, then rinse thoroughly with clean water and let them drain.

  • Sauté the ingredients

Place a pot on the stove, add 3 tablespoons of cooking oil and heat it up, then add 1 tablespoon of minced shallots and 1/2 tablespoon of minced garlic to sauté until fragrant.

When the shallots and garlic are aromatic, add the onion and pineapple. Turn the heat to medium and sauté for about 5 minutes until the ingredients are just cooked.

Tip: Sautéing the ingredients before cooking helps the broth have a more delicious aroma.

Step 2 Sauté the ingredients for Sardine Noodle Soup
  • Cook the broth

When the aroma is strong and the onion is just cooked, add 2 cans of sardines and 800ml of water to the pot and boil over high heat.

To make the broth richer and fattier, you can take 1 – 2 pieces of sardines and mash them with a spoon before mixing them into the water.

Next, add 1/2 teaspoon of monosodium glutamate, 2 teaspoons of salt, 2 tablespoons of sugar, 1/2 teaspoon of dried chili, and stir well to dissolve all the seasonings completely.

Tip: Adding a little dried chili to the pot helps eliminate the fishy smell and gives the broth a slightly spicy taste that stimulates the palate.

Cook over high heat until the water in the pot boils, then add the tomatoes to the pot, and continue cooking until the water boils again.

    Tip:

    • During the cooking process, you should frequently skim off the foam to keep the broth clear and visually appealing.
    • Since canned sardines are already cooked, you should not cook the dish for too long to avoid the fish becoming mushy.
    • Adding the tomatoes last helps them retain their natural crispness and sweetness.

Finally, season to taste and then turn off the heat.

Place another pot of water on the stove and bring it to a boil, then add the noodles and blanch for about 2 – 3 minutes until the noodles are loose and no longer sticking together, then turn off the heat.

Drain the noodles into a sieve or basket and let them drain.

Suggestions for buying canned sardines

  • You can find canned sardines at local markets, convenience stores, or supermarkets nationwide.
  • You can also easily find canned sardines at TasteVN supermarkets nationwide or purchase them online on the e-commerce site bachhoaxanh.com.
  • You should choose canned sardines from reputable, well-known brands. When purchasing, be sure to read carefully the information about the origin, ingredients, and expiration date of the product.

How to choose fresh, delicious pineapples

  • Choose pineapples that have a bright yellow color from the crown to the tail, with possibly a few eyes slightly green; these are ripe fruits that will be sweet and tasty. Round, short pineapples will have more flesh compared to long ones.
  • Choose pineapples with large, sparse eyes because this indicates that the pineapple is mature and ripened naturally, without being soaked in chemicals.
  • You can try smelling the end of the fruit; if it has a fragrant smell, it’s a good sign to buy. Additionally, avoid choosing fruits that have a slightly sour smell like fermented, as those pineapples are overripe.
  • The greener the crown of the pineapple, the fresher it is. Overripe pineapples will have a dry or brown crown.
  • Choose pineapples that are fresh and not too hard or too soft; when you press your finger into it, there should be no indentation.

How to choose fresh tomatoes

  • When buying tomatoes, observe and choose those with shiny skin, not too large, and with the stem still firmly attached to the fruit.
  • You should choose tomatoes that feel firm in your hand and have a light fragrant smell when sniffed. Ripe, delicious tomatoes will have seeds inside that are yellow and flesh that is bright red.
  • Avoid choosing bruised, scratched fruits or those without stems. Do not choose overly large and soft fruits.

How to choose fresh noodles

  • When choosing fresh noodles, you should select smooth, fragrant noodles that have a chewy, soft texture, and when you hold them up, they should have a certain elasticity when pulled.
  • Avoid choosing noodles that are crumbly, broken, moldy, or have unusual colors and smells.
  • You should look for fresh noodles at markets, supermarkets, or reputable stores to ensure the quality of the noodles.
  • Alternatively, you can also use dried noodles and soak them in hot water to expand them and use them immediately.
