    To save preparation time, ask the seller to cut off the head (as the goby fish head has bones and is not tasty), and clean the fish for you.

    When you bring it home, just wash it with water, scale it, and rub salt on the fish’s body to remove all the slime, rinse it a few times with water, and let it drain.

  • Prepare the Ingredients

    You can buy goby fish at the market or supermarkets. After purchasing, clean and wash it with salt, lemon, or vinegar to remove the slime and fishy smell.

    To clean the goby fish, you can follow these steps:
    • Wash the goby fish with cold water to remove any dirt on its surface.
    • Use a sharp knife or scissors to cut off the head, fins, tail, and belly of the fish.
    • Next, use scissors to cut along the back of the fish to remove the spine, starting from the tail and moving up to the head.
    • Use the knife blade to cut the fish into two pieces on each side of the removed spine. Cut this piece of fish away from the spine.
    • Rinse the flesh of the fish with cold water and cut it into small pieces for use.
