How to choose good pork:
- You should choose pork that is bright pink, has no strange smell, with transparent white fat, and avoid meat that is pale and has a bad odor.
- You can press the meat with your hand; if you see it bounce back immediately, leaving no indentation, and the piece is dry and not sticky, it indicates good meat.
- Good pork should have even, firm fibers and not be leaking juices or slimy.
- When buying meat, you should ask the seller to cut it along the grain and avoid meat with small white sacs interspersed between the fibers, as it may be infected with cysts, which could adversely affect your health when consumed.

Prepare the Pork
After purchasing the meat, soak it in salt water, using your hands to rub the entire piece of meat to remove all blood and impurities, helping to reduce the odor of the meat.
Rinse with clean water and let it drain while waiting to be processed.
How to Clean the Meat Properly, Without Odor
- When you buy pork, you need to scrape off the hair on the skin, or you can ask the seller to help scrape it off to save time.
- Soak the pork in diluted salt water for about 15 minutes. After soaking, rinse thoroughly with cold water about 3 – 4 times.
- You can also use a mixture of salt and vinegar to wash the pork, which helps to eliminate the odor even better!

Marinate the Meat
After the pork has drained, marinate it with 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of five-spice powder (note to sprinkle the seasoning evenly over the entire piece of meat).
Use your hands to mix and gently massage the meat so that it absorbs the seasoning evenly for about 30 minutes.

Rolling the meat
Once the marinating time is sufficient, use both hands to roll the piece of meat into a circle and then use string (thread, fishing line, or nylon string can all be used) to secure the piece of meat.

Steaming the meat
Add 3 cups of water to the steamer pot, place it on the stove and wait for it to boil, then place the piece of meat on the steaming rack to steam. Cover the lid and turn on medium heat, steam for 15 minutes.
Once steamed, take the piece of meat out to drain. You can mix a salt and vinegar mixture by adding 1/2 teaspoon of salt and 2 teaspoons of vinegar to a bowl and stirring well until the salt dissolves.
Next, use a sharp stick, fork, or toothpick to poke evenly over the skin, then use a brush to evenly spread the salt and vinegar mixture over the skin of the piece of meat (if you haven’t prepared the salt and vinegar mixture, you can sprinkle a layer of salt followed by a layer of vinegar evenly on the surface of the piece of meat).

Frying the meat
You place a pan on the stove, add 2 cups of cooking oil, turn on medium heat and wait for the oil to heat up. You can test if the oil is hot by dipping the end of a chopstick into the oil; if it bubbles, the oil is ready.
Gently place the piece of meat into the hot oil (be careful of oil splashing), fry on low heat until both sides are golden brown, then remove and drain the oil.
Tips for crispy, delicious fried meat without oil splatter
- Wait for the oil to be hot before adding the meat, fry on low heat, and when one side is golden, flip the meat and continue frying until the other side is also golden.
